Recipe Ingredients: 1 pound chicken breasts 2 tablespoons olive or avocado oil 1 large sweet yellow onion, chopped 1 green pepper, chopped 4 garlic cloves (minced, pressed or chopped) 3 stalks celery 1 pound baby carrots 1 teaspoon chili powder 1/2 teaspoon cumin (more if you want more spice!) 32 ounces chicken broth 1 teaspoon granulated chicken bouillon 2 cans creamed corn 3 cans white northern beans or Cannellini beans 1 can mild green chilies Optional: Grated cheddar cheese Sour cream Tortilla strips Recipe Directions: Oven roast, air fry or boil your chicken in broth and cook until the internal temperature is 165 degrees. Set it aside. Chop, mince, or press the garlic. Sauté the onions, celery, and garlic in oil until the onions are translucent. Add chicken broth, bouillon and spices and bring to a boil. Add baby carrots and cook until tender. Add chopped green pepper and chicken and bring to a simmer. Simmer for 5 minutes. Add the creamed corn, beans and green chilies. Heat through. No problem. This recipe isn’t for them – it’s just for us adults. It calls for two six inch zucchini, but we do recommend you double it. Seriously, they are that good! Recipe Ingredients: 2 six inch zucchini 2 tablespoons avocado oil 2 large garlic cloves ½ cup chopped sweet yellow onion ½ teaspoon salt ¼ cup parmesan cheese 1 tablespoon sour cream ½ cup crushed croutons ½ cup mozzarella cheese Balsamic glaze Recipe Directions: Preheat oven to 375 degrees. Boil the zucchini gently in salted water for 5-6 minutes. Remove from water and let cool. Sauté the onion and garlic in the avocado oil until golden. Cut the zucchini in two and scoop out the pulp. Chop the pulp from one whole zucchini and add it to the onion and garlic mixture. Remove from heat. Add salt, Parmesan cheese, sour cream and crushed croutons. Mix until blended. Take the mixture and stuff each of the four zucchini halves. Place in oven and bake for 10 minutes. Remove the zucchini from the oven and sprinkle the mozzarella cheese over each half. Return to oven and bake until the mozzarella cheese is melted (about 5 minutes). Drizzle with balsamic glaze and serve with your favorite entrée. Crack egg in dish and whisk it for egg wash. Unroll thawed phyllo dough sheets. Take three sheets and brush honey butter between each sheet and stack. Cut prepared phyllo dough into strips as seen in video. Take one to two asparagus spears, lay across phyllo dough strip and place a piece of the brie cheese on top. Either roll the dough around the spears as seen in video or wrap the dough up the spear, your choice. Place wrapped spears on baking sheet, brush on egg wash, sprinkle with flaked sea salt. Bake in oven for about 10 mins or until golden brown. Serve warm.
