Dear Vegan...Are you tired of feeling left out when it comes to indulging in delicious baked goods? Well, I have some good news for you! Today, I'm going to share with you a recipe for depression cake that is 100% vegan and totally scrumptious!

First off, let me just say that depression cake has a pretty interesting history. It's said that this cake originated during the Great Depression when people didn't have access to a lot of ingredients. So, they had to get creative with their baking! But don't worry, this recipe is much easier to make than it sounds. This cake is perfect for satisfying your sweet tooth without any animal products or guilt.

Directions:

Pre-heat oven to 350 degrees. Dump all ingredients into a bowl and mix with a whisk. Pour into a greased or parchment lined cake pan. Bake for 30 mins or until an inserted toothpick is removed with only a few crumbs (not clean!) on it. Let it cool.


Optional: Sprinkle with powdered sugar or make your favorite vegan frosting, ice and enjoy.

  • 1 1⁄2 cups all-purpose flour

  • 1⁄3 cup Dutch Cocoa Powder

  • 1 cup sugar

  • 1 tsp baking soda

  • 1⁄2 salt

  • 1 tsp white distilled vinegar

  • 1 teaspoon vanilla bean paste or extract

  • 1⁄3 cup vegetable oil

  • 1 cup water

  • Non-stick spray
