Recipe Ingredients: 1 cake mix 2 eggs Oil or butter (following box instruction) Cooking spray or butter to coat pan Buttercream Icing Recipe Directions: Supplies: (1) 8" round cakes flavor of your choice 6 cups of the buttercream of your choice 1M cake decorating tip 1/2 bag of flaked coconut colored green Candy melts for whiskers, mouth, nose and tail Pink gel coloring Green gel coloring Wafer paper 8" or 9" cake board round Cake Play isomalt, silicone eye ball mold and eyes printed on a frosting sheet Speckled candy eggs of your choice Baking: Preheat the oven to 350 degrees. Coat the inside of the cake pans with cooking spray or butter. Dust with flour. Mix the cake mix according to the directions on the box. Bake according to the directions on the cake mix. In the summer, we garnish with fresh fruits in season. In the colder months, we make up our own fruit sauce and add generous amounts to each slice. Recipe Ingredients: For the crust: 1 3/4 cups graham cracker crumbs 1/2 teaspoon Saigon cinnamon 1/2 cup butter, melted For the filling: 3 8-ounce packages cream cheese 1 cup sugar 2 tablespoons unbleached flour 2 teaspoons vanilla bean paste 2 eggs 1 egg yolk 1/4 cup milk Recipe Directions: For the crust: Preheat oven to 375 degrees. Mix the graham cracker crumbs and Saigon cinnamon together in a bowl. Add butter and mix until combined. Press the graham cracker mixture into the bottom and two inches up the side of an 8 or 9-inch springform pan. Set aside. For the filling: Soften the cream cheese in a large bowl. Combine the sugar, flour and vanilla with the cream cheese and beat with an electric mixer until combined. Add the whole eggs and egg yolk all at once. Beat on low speed until combined. Stir in the milk and stir until combined. Pour the filling into the springform pan. Place in a shallow baking pan. Bake at 375 degrees for 45-50 minutes (8 inch pan), and 35-40 minutes (9 inch pan). Bake until the center appears nearly set when shaken gently. Remove from oven and cool on a wire rack for 15 minutes. Loosen the crust from the sides of the pan and cool for an additional 30 minutes. Cover and chill for at least 4 hours before serving. Variations: Fresh fruit: When fresh fruit is available, slice the fruit and allow to set in a small amount of sugar. Recipe Ingredients: Apple cider sauce 3 tablespoons unsalted butter 1/4 cup dark brown sugar 2 tablespoons corn starch 1/2 teaspoon salt 2 cups apple cider 1 1/2 teaspoons apple pie spice 1 1/2 teaspoons cinnamon 4 or 5 apples 1 recipe Butter Pie Crust Crumb topping 1 cup flour 1/2 cup sugar 1/2 cup unsalted butter 1/4 teaspoon salt Recipe Directions: Combine the brown sugar and cornstarch together. In a heavy-bottomed pot, bring the butter, sugar, cornstarch and apple cider to a boil. Continue cooking until it thickens. Remove the pot from the heat and stir in the salt and spices. Set aside to cool slightly. Roll out half of the pastry dough to a 13-inch (33-cm) circle, about 1⁄8 inch thick (3 mm) and place it in a 9 inch pie plate. Finish the top of the pie crust by crimping the edges along the top of the crust with a fork or you can use your fingers to create a clean top edge. From cheese cake to frozen desserts, graham crackers make the perfect bottom to your favorite confection. Recipe Ingredients: 1 1/4 cups graham cracker crumbs (about 15 squares) 3 tablespoons sugar 1/3 cup butter, melted Recipe Directions: Heat the oven to 375 degrees. Combine graham cracker crumbs and sugar in a medium bowl and stir to mix them well. Add the butter and stir to mix it evenly into the crumbs mixture. Press the buttery crumbs into a 9-inch pie pan, distributing the mixture evenly, and pressing firmly with your hands or another pie pan of the same size, to flatten the crumbs and shape a sturdy crust to hold the filling. Make sure to work the crumbs up to the rim of the pan, to make a good, strong edge. Place the crust on the center shelf of the oven. Bake at until the crust is heated through and lightly browned, 8 to 10 minutes. Place the crust on a cooling rack and let it cool to room temperature before adding the filling. NOTE: You can purchase graham cracker crumbs in the baking section of the grocery store. If you purchase graham crackers, you can make crumbs using a food processor. Just break the graham crackers into medium pieces, and put them into the work bowl of a food processor. Pulse to break pieces down into bits. Process until you have fine crumbs, stopping once or twice to scrape the sides and grind them evenly. Measure out 1 1/4 cups, and prepare the crust as directed.
