Heat butter in oil in a large pan over medium heat. Add onions, cayenne, salt and pepper. Sauté for 10 minutes. Reduce heat to medium-low and cook, stirring occasionally, for 20 minutes. The onions should be browned and caramelized. Remove from heat and place onions in a strainer until cool. Place cream cheese, sour cream and mayonnaise in a stand mixer bowl with paddle attachment. Beat until smooth. Add the onions and mix well. Season to taste. Serve at room temperature. Ingredients: 1 tablespoon unsalted butter 1 tablespoon olive oil 2 cups (12 oz./375 g) fresh grilled corn kernels (cut from about 3 ears) 2 ripe avocados, pitted, peeled and diced or thinly sliced 1 small head romaine lettuce, torn into bite-size pieces 1 pint grape tomatoes, halved 3 tablespoon fresh cilantro Grated zest and juice of 1 lime 3 tablespoon vegetable oil 2 teaspoon honey Kosher salt and freshly ground pepper 1/4 cup (1 1/2 oz./45 g) crumbled cotija cheese Fresh Cilantro leaves for garnish Directions In a large sauté pan over high heat, warm the butter and olive oil until nearly smoking. Add the corn and sauté, stirring occasionally, until just tender and lightly browned in spots, 3 to 4 minutes. Transfer to a plate and let cool to room temperature. In a large bowl combine the cooled corn, avocados, lettuce and tomatoes. In a small bowl, combine the lime zest and juice, vegetable oil, honey and salt and pepper to taste. Whisk until combined. Pour the dressing over the vegetable mixture and toss gently to combine. Sprinkle the salad with the cotija, garnish with the basil and serve immediately. Serves 6 to 8. What's for dessert?

Add beaten eggs and stir until half cooked. Add rice and stir until blended. Stir in sugar and soy sauce. Add grilled chicken and green onions. Cook until thoroughly blended. Place ground turkey into a bowl and add garlic powder, dehydrated onion, parsley and basil. For extra flavor add in crispy onions. Add Worcestershire sauce, two eggs, parmesan cheese and breadcrumbs. Use your hands or a spatula to mix it all together well. Add some salt and pepper and give it one last mix. Form ground turkey into 6 to 12 balls and place on lined baking sheet and shape them into patties. Grill now or place the whole sheet pan in the freezer and let the patties firm up. Once frozen, place squares of parchment paper between each patty and put in a freezer bag. Cook them as you like and enjoy! Recipe Ingredients: 2 pounds fresh asparagus Avocado oil spray Balsamic glaze 1 fresh lemon, sliced Salt Recipe Directions: Prep work: Be sure to chose thin, uniform stalks of asparagus. They take less time to cook and have a better texture. Cut the woody ends off the stalks. I like to bend them and let them snap by themselves. This assures that the tough ends are all removed. Trim any rough ends. Line your baking dish or grilling pan with aluminum foil and preheat before adding the veggie. The grill marks add a ton of flavor to the asparagus. Baking: Preheated to 425 degrees. Place your foil lined pan in the oven for 5 minutes. Note: You will want the asparagus to sizzle when it hits the foil. Spray the asparagus with the avocado oil, and toss to coat on all sides. Season generously with salt. Remove pan from oven and place the spears on the foil and spray lightly with oil. Bake at 425 degrees for five minutes. Remove from oven and turn the spears ensuring all sides are charred. Add lemon slices and bake until the asparagus is tender. Grilling: Preheat the grilling pan in the grill. Add the salted and oiled asparagus to the preheated grilling pan. Place on grill and close the lid. Bake until lightly charred. Turn the spears and close the lid and bake several minutes. Turn spears and add the fresh lemon slices. Cook until spears are tender. Variations: Slice one large sweet yellow onion. Grill onions slices in a separate pan (following above instructions). Toss with the grilled asparagus. Add the fresh lemon slices. Cook until the veggies are tender.
