Recipe Ingredients: Cake 1 cup granulated sugar 1/2 cup unsalted butter, room temp 3 teaspoon freshly grated blood orange zest 4 large eggs, room temp 1 cup unbleached all-purpose flour 1 1/2 teaspoon baking powder 1/4 teaspoon sea salt 1 tablespoon vanilla bean paste 1 3/4 cup Bob’s Redmill, Unsweetened, Unsulfured cocoanut (See instructions for making homemade desiccated coconut ) 4 tablespoons freshly squeezed blood orange juice 1 Recipe of Honey Whipped Cream Garnish Candied Orange slices Recipe Directions: Pre-heat an oven to 350-degrees with an oven rack positioned in the middle. Prepare mini cake pans with butter and line bottom of pan with parchment paper and set-aside. To prepare the batter: To the bowl of a stand mixer fitted with a paddle attachment cream sugar, butter, and blood orange zest. Beat until light and fluffy, about 4 minutes. Be sure your eggs are room temp or they will curdle your butter. Add eggs one at a time, beating until combined and stopping to scrap the bowl before adding the next egg. To a bowl add the flour, baking powder, salt, and desiccated coconut, whisk to combine. Add flour mixture gradually to your creamed mixture. Add blood orange juice to the bowl and beat on low until combined, stopping to scrape bowl sides and paddle as needed. Portion cake batter out evening between mini cake pans and place in the preheated oven. Bake until a cake tester inserted in the middle of the cakes comes out clean, 20-30 minutes. Rotate pans half way through the baking time. Transfer baked cakes to a wire cooling rack for 10 minutes. Invert the pans on to a parchment lined cooling rack to avoid cakes from sticking to wire rack. All cakes to cool completely. To serve: Place on mini cake with the top of the cake facing down and the flat bottom of the cake facing up onto a plate and tort the cake. Using a pastry bag fitted with a 1M tip and filled with the whipped cream pipe stars in between the torte layers. On top of the cake pipe more stars and garnish with candied, quartered orange slices. Made with fresh crab and artichokes blended with cream cheese, this warm your tummy dip is best served with crisp toasted French baguette slices. Recipe Ingredients: 3 tablespoons butter 4 garlic cloves, minced 1 large can artichoke hearts 3 - 8 ounce packages cream cheese 1 pound fresh crab meat (or 2 six ounce cans) 1 cup Parmesan cheese 1/2 cup sliced green onions 1 teaspoon horseradish 1/4 teaspoon pepper sauce Mozzarella cheese, shredded Cheddar cheese, shredded Recipe Directions: Sauté garlic, artichoke hearts and green onions in butter. Place cream cheese, Parmesan cheese and crab into mixing bowl with paddle. Add sautéed vegetables, horseradish and pepper sauce and blend. Place in an 9 inch pie pan and sprinkle top with Mozzarella and cheddar cheeses. Bake until golden on top and bubbly. Serve with toasted French baguette slices. We use freeze dried blueberries to our cream scones. They add a delicious extra rush of flavor and maintain their color and consistency. Our cream scones develop a wonderful texture if the dough is frozen overnight. Freeze individual scones, and then bake as many as needed straight for the freezer to accompany breakfast, brunch or dinner. Recipe Ingredients: ½ cup sugar 3 ¾ cup bread flour, or pastry flour 2 teaspoons baking powder 2 teaspoons salt 1 cup freeze dried blueberries 2 ½ cups heavy cream, chilled Cooking spray for greasing Egg wash ( 1 large egg whisked with 2 tablespoons heavy cream) Recipe Directions: Combine the sugar, flour, baking powder and salt in a stand mixer fitted with the paddle attachment. Mix on medium speed until well blended, about 1 minute. Add the cream and mix on medium speed until just combined. Remove the dough from the mixer, and carefully blend the freeze dried blueberries into the dough. Pat into a 10-inch round ¼ inch thick, and divide into 12 equal wedges. Wrap in plastic and freeze for at least 4 hours, or until solid. Once dough is frozen, preheat the oven to 350 degrees. Lightly grease a baking sheet. Arrange the frozen scones on the baking sheet, brush with egg wash, and bake until golden brown, 35-40 minutes. Let the scones cool on the baking sheet for a few minutes before transferring to a wire rack. Let cool completely before serving.
