Recipe Ingredients: 1 3/4 cup water at 110 degrees 2 1/2 cups flour 3 cups oat bran 2 packages active dry yeast 1/2 cup oil 1/4 cup honey 1/4 cup brown sugar 2 teaspoons salt 1 cup oatmeal 1 egg white, beaten Recipe Directions: Place the 110 degree water into the mixing bowl of a stand mixer. Add yeast to the water and combine. Add oil, honey, brown sugar and oats. Add salt. Add all but 1 1/2 cups of the flour and oat bran mixture to the mixing bowl. Mix with dough hook and scrape sides during mixing. Once fully combined, gradually add remaining flour and oat bran mixture. Knead on medium low for 8-10 minutes until the dough is smooth and elastic. Grease a large glass bowl with butter. Turn the dough into the glass bowl and turn until it is coated with butter. Cover the bowl with a clean towel and set in a warm place (you will need to make sure the temperature is 80-85 degrees for optimal results). Once the dough has doubled in size (this will take about 1 1/2 hours), turn the dough onto a lightly floured surface. Gently knead into a smooth ball. Divide in two and form into loaves. Grease two bread pans. Place the dough loaves in the bread pans. Let rise until double (about an hour). Bake at 375 degrees until golden brown. These cookies are great for any occasion and can be filled with standard buttercream or cream cheese buttercream. Be sure to make extra as they will not last! Recipe Ingredients: 1 cup unsalted butter 2 cups confectioners sugar 1 egg 2 teaspoons Vanilla Bean Paste {or extract} 1 tablespoon Lorann red velvet emulsion 2-3 tablespoons milk 1/2 cup Hershey’s Cocoa Powder 1/4 cup Buttermilk Powder 3 1/4 cups All Purpose Flour King Arthur 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon apple cider vinegar Recipe Directions: Cream together butter and confectioners sugar. Add the egg, vanilla, red velvet emulsion, and milk. Mix well. NOTE: Start with 2 tablespoons of milk, then add the rest if the dough is a little dry after adding the flour mixture. Sift together the cocoa, buttermilk powder, flour, baking powder and salt. Add to the wet ingredients. As the dough begins to form add a splash of apple cider vinegar. The dough should be soft but not sticky. After mixing, let it rest for five to ten minutes, then roll out on parchment paper to 1/4 inch thickness, dusting lightly with flour if needed. I couldn't wait to get to Grandma's house and pull one of her delicious cookies out of the glass cookie jar. Her cookies were slightly crunchy around the edges and chewy in the middle. No other cookie has compared to hers! Recipe Ingredients: 1 cup butter flavored or regular shortening 1 1/2 cups white sugar 1/2 cup brown sugar, firmly packed 2 eggs 1 teaspoon vanilla 2 1/4 cups flour 1 teaspoon baking soda 1 teaspoon salt 1 package semi-sweet chocolate chips Recipe Directions: In a large bowl, cream the shortening, sugars, vanilla and eggs together until fluffy. Shift dry ingredients together. Gradually stir into the creamed mixture. Fold in the chocolate chips. Use an ice cream scoop to drop the cookies onto the cookie sheet. Make sure the dough is even with the top of the scoop. Bake at 375 degrees for 10-12 minutes. When you take the pan out of the oven, drop it on the counter. This will make the cookie flatten a bit and it will be extra chewy! Allow the cookies to cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely. In season herbs jazz up any salad including my basil bow-tie pasta salad. Recipe Ingredients: 2-4 grilled chicken breasts 1 package Bow-Tie pasta Fresh basil 1/2 to 1 cup Parmesan cheese Regular or light Caesar dressing Recipe Directions: Bring 4 - 6 quarts of water to a rolling boil, add salt to taste. Add bow-tie pasta to boiling water. Stir gently. Return to boil. For al dente pasta, boil uncovered for 11 minutes. Remove from heat and drain. Allow pasta too cool. Toss with fresh basil, Parmesan cheese and grilled chicken pieces. Add cherry tomatoes and lettuce. Toss with Caesar dressing. Variations: You can also serve hot as a main dish: Cook pasta as directed above. Remove from heat and drain. Toss with fresh basil, Parmesan cheese and Caesar dressing. Cut the grilled chicken into bite sized pieces and toss with pasta. Serve immediately. Our Southern oven fried chicken breasts are crisp and delicious without deep frying in a pool of grease! Recipe Ingredients: 4 chicken breasts Avocado or olive oil cooking spray Avocado or olive oil (liquid) Buttermilk marinade 2 cups buttermilk 2 garlic cloves, minced 1 tablespoon fresh basil, chopped Coating 2 cups buttermilk pancake mix 1 tablespoon Johnny's seasoning or chicken salt 2 teaspoons onion powder Recipe Directions: Cut the chicken breasts into strips. About three strips per breast. Combine buttermilk, garlic and fresh basil in a deep dish with a lid. Place chicken in the buttermilk marinade. Place the chicken and marinade in the refrigerator and allow to marinade for at least four hours (or up to 24 hours). Preheat oven to 425 degrees. Combine pancake mix and seasonings. Make sure to whisk together to fully combine all seasons! Use tongs to remove the chicken from the buttermilk marinade and add to coating mix. Allow each piece to drain a bit so the coating mixture doesn't get clumpy. Make sure each piece of chicken is evenly coated. Generously grease a 9x12 baking dish with avocado oil. Place each piece of coated chicken in the dish. Spray the top of each piece of chicken with the cooking spray. Place in oven and bake for 20 minutes. Remove from oven and spray any floured areas on the chicken with additional cooking spray. Return to oven and bake for 20 minutes. Check the chicken to ensure there is no visible flour on top. If there is, spray with cooking spray and return to oven. Bake the chicken to 165 degrees. Remove from oven and allow to rest for 10 minutes. Serve with your favorite dipping sauce! Variations: Love drumsticks and chicken wings ? Use your favorite piece or the entire chicken! Like spicy? Add red pepper flakes to the coating mix. Recipe Ingredients: 2 teaspoons active dry yeast 1 cup warm water 3 cups all purpose flour (more for dusting) 1 teaspoon kosher salt 2 tablespoons olive oil (more for coating) 1/2 cup sliced green onions 1 tablespoon minced rosemary Minced garlic Recipe Directions: Use stand mixer with dough hook. Add water and yeast and allow the yeast to bloom. Add the flour and salt and mix on low speed until the dough starts to come together. You may need to scrape the sides of the bowl. Drizzle in the olive oil and knead the dough for about 5 minutes. The dough should be smooth, come away clean from the bowl and have a bit of stretch to it. Oil a clean bowl that is twice the size of your dough and transfer the dough into it. Cover with plastic and let rise overnight or in the fridge. You can also let it rise at room temperature for 1-2 hours. Line a half sheet pan with parchment paper and spread dough with lightly oiled finger into the pan. Brush with olive oil and spread minced garlic over the top of the dough. Sprinkle with green onion, rosemary, and sea salt. Let stand 30-45 minutes. Preheat oven to 400 degrees. Bake for 45 minutes until golden brown. Variation: You can add freshly grated Parmesan cheese, Romano, Asiago or all three of the cheeses for extra flavor. Recipe Ingredients: 1 pound raw shrimp, cleaned with shells removed 2 teaspoons ground cumin 1 tablespoon fresh cilantro 2-3 fresh garlic cloves Zest of one fresh lemon Juice of one fresh lemon Olive oil Salt to taste 1 medium sized mango 1 head romaine lettuce, chopped Crisp balsamic beet strips (packaged, from store) Recipe Directions: Place the cleaned, raw shrimp in a bowl. Add the cumin powder and cilantro. Stir to combine. Zest the lemon onto the shrimp and spices. Cut the lemon in half and squeeze the juice over the shrimp. Use zester to grate the garlic into the mixture and add olive oil and toss to combine. Peel the mango according to video instruction. Reserve the mango juice. Cut the mango into cubes and place in a separate bowl. Grill shrimp on the grill or in a cast iron pan generously coated with olive oil. Pour remaining juices over the shrimp while it cooks. Make the citrus champagne dressing (recipe linked on this page). Chop romaine lettuce and place in separate bowl. Add citrus champagne dressing and chopped mangos. Toss well and transfer to individual serving bowls. Place grilled shrimp on top and garnish with crisp balsamic beet strips.
