Ingredients: 2 pounds white potatoes 1 tablespoon salt 2 garlic cloves, minced 1 sweet yellow onion, minced Cooking oil to sauté the onion 2 cups shredded cheddar cheese 1 quart low fat milk or half and half Butter for greasing pan Directions: Preheat oven to 350 degrees. Grease a 9/13 inch baking pan with butter. Sauté the sweet yellow onion in cooking oil until caramelized. Add the minced garlic and cook through. Peel potatoes and slice thin. Layer 1/3 of the potatoes in the pan. Spread 1/3 of the sautéd onion mixture over the potatoes. Spread 1/3 of the cheddar cheese over the sautéd onion mixture. Repeat with two more layers. Pour the milk evenly over the top of the potatoes. Bake until tender (about 60-90 minutes). Makes 6-8 servings. Variations: Cube 1 pound ham and brown in cooking oil. Layer on top of the cheddar cheese. Love spam? Substitute for the ham! How about a delicious dessert?

It doesn't spread and is ideal for all your cookie projects! Ingredients: 2 cups unsalted butter 2 cups bakers sugar 2 eggs 1 teaspoons vanilla extract 2 teaspoons Lemon Extract (LorAnn Bakery Emulsions) 5 1⁄2 to 6 cups all purpose flour 3 teaspoons baking powder 1 teaspoon salt Directions: In a 5qt mixer or a large bowl, cream the butter and sugar until fluffy. Add the eggs, mix. Add vanilla and Lemon extract, mix. In a separate bowl, mix the flour, baking powder and salt together. Gradually add to the butter mixture until incorporated. TIP: For 3D cookies it is best to hold back a bit on the flour (5 1⁄4 or 5 1⁄2 cups). Scrape bowl and mix until dough comes together. Wrap dough in plastic wrap and refrigerate for at least 1 hour. Roll out cookies on parchment paper, cut shapes leaving space between the cookies, then place the parchment paper with the cookies onto a cookie sheet. Bake cookies at 350 degrees in a regular oven or 300-325 degrees in a convection oven until golden brown around the edges. Ingredients: 1 package dry pinto beans 1 quart water 1 large sweet yellow onion, chopped 3 large garlic cloves, minced 1/4 cup avocado oil 1 quart beef broth 2 tomato bouillon cubes 2 additional cups water Directions: Rinse and sort the dried beans. Place in large kettle with 4 cups water. Bring to boil and simmer for 5 minutes. Remove from heat and allow to soak for an hour. Drain the beans. Place avocado oil in the pan and sauté the onions and garlic until caramelized. Add the beans, tomato bouillon and 1 quart of beef broth. Simmer until tender. Ingredients: 1 cup (2 sticks butter) 1 cup brown sugar 1/2 cup white sugar 2 eggs 1 tablespoon vanilla bean paste 2 1/4 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 package semi-sweet chocolate chips 1 package mini M&Ms Honey roasted pecans, crushed Directions: In a large bowl, cream the butter, sugars, vanilla bean paste and eggs together until fluffy. Shift dry ingredients together. Gradually stir into the creamed mixture. Stir in crushed honey roasted pecans until blended. Fold in the chocolate chips and Mini M&Ms. Chill for 2 hours. Use an ice cream scoop to drop the cookies onto the cookie sheet. Bake at 350 degrees for 10-12 minutes.
