We like to toss ours with homemade gnocchi but regular pasta would be a good choice as well. Trust us, your taste buds will thank you. This dish is perfect for fall and winter as a side. Recipe Ingredients: 5 tablespoon Unsalted Butter 2 cups cubbed Butternut Squash (cut ¼ inch pieces) Sea Salt & Freshly Ground Pepper 1 tablespoon Sherry Vinegar 1 tablespoon thinly sliced sage leaves Freshly grated Parmigiano-Reggiano cheese for serving Recipe Directions: In a large skillet set over medium-high heat add 1 tablespoon of butter. When butter melts and foam subsides, add squash, season with salt and pepper and let caramelize and tender. About 7-10 mins. Transfer squash to a plate. Return skillet to heat and add remaining 4 tablespoons of butter. Melt butter stirring occasionally until the milk solids turn golden brown and the butter takes on a nutty aroma. Stir in sherry vinegar and sage. Taste and adjust seasoning with salt and pepper. Fold in Squash and reduce heat too low. Toss well with parmesan and garnish with parmesan. Enjoy! Recipe Ingredients: 1 1/8 cups almond flour 2 2/3 cups all-purpose flour 3/4 teaspoon salt 1 1/2 cups cold unsalted butter 1/3 cup to 3/4 ice water Recipe Directions: Combine the almond flour, all-purpose flour, and salt in a mixing bowl. It took us years to find a decent fried rice recipe. This one is adapted from the menu of a Chinese restaurant that was located in Bremerton, Washington. While the restaurant is no longer open, I will cherish the times I sat in the back kitchen and watched Chef Henry cook up this wonderful dish! Recipe Ingredients: 2 cups cooked white rice 2 eggs, beaten 4 green onions chopped (reserve 1 for garnish) 1/4 cup chopped grilled chicken 1 tablespoon sugar 1-2 tablespoons soy sauce 1 tablespoon oil (for stir frying) Recipe Directions: Heat oil in a wok or large frying pan. Add beaten eggs and stir until half cooked. Add rice and stir until blended. Stir in sugar and soy sauce. Add grilled chicken and green onions. Cook until thoroughly blended. Garnish with reserved green onion. Variation Substitute fast food Asian white rice and grilled chicken for a quick and easy meal! Recipe Ingredients: 1 tablespoon unsalted butter 1 tablespoon olive oil 2 cups (12 oz./375 g) fresh grilled corn kernels (cut from about 3 ears) 2 ripe avocados, pitted, peeled and diced or thinly sliced 1 small head romaine lettuce, torn into bite-size pieces 1 pint grape tomatoes, halved 3 tablespoon fresh cilantro Grated zest and juice of 1 lime 3 tablespoon vegetable oil 2 teaspoon honey Kosher salt and freshly ground pepper 1/4 cup (1 1/2 oz./45 g) crumbled cotija cheese Fresh Cilantro leaves for garnish Recipe Directions: In a large sauté pan over high heat, warm the butter and olive oil until nearly smoking. Add the corn and sauté, stirring occasionally, until just tender and lightly browned in spots, 3 to 4 minutes. Transfer to a plate and let cool to room temperature. In a large bowl combine the cooled corn, avocados, lettuce and tomatoes. In a small bowl, combine the lime zest and juice, vegetable oil, honey and salt and pepper to taste. Whisk until combined. Pour the dressing over the vegetable mixture and toss gently to combine. Sprinkle the salad with the cotija, garnish with the basil and serve immediately. You’ll use butternut squash, Brussels sprouts, onion, and apple roasted in bacon drippings with garlic, onion powder, salt, and pepper. The maple bacon adds depth and cooks right on the sheet pan before you toss in your vegetables. The process takes under an hour. First bake the bacon until crisp, then coat your vegetables in the rendered fat and season them. Roast until tender and caramelized, adding the chopped bacon back in toward the end. A drizzle of optional balsamic glaze at the finish ties it all together. You can serve roasted harvest veggies as a side, or turn it into a hearty soup by puréeing half and leaving the rest chunky. It’s straightforward, flexible, and doesn’t need much attention while cooking. #RoastedHarvestVeggies #MapleBaconVeggies #WinterRecipe Recipe Ingredients: 12 oz maple bacon 1 small butternut squash, peeled and cubed 1 sweet yellow onion, sliced 1 apple, chopped 1 cup Brussels sprouts, halved 1 tsp garlic salt 1 tsp onion powder ½ tsp white pepper 1 tsp kosher salt Freeze-dried herbs (shallots, parsley, dill) 1–2 tbsp avocado oil (optional) Balsamic glaze (optional) Recipe Directions: Preheat your oven to 425°F. Line a baking sheet with nonstick foil. Bake the bacon for 15 to 20 minutes, flipping halfway, until crisp but not dry. Remove and set aside. Leave the drippings on the sheet. Add squash, sprouts, onion, apple, and broccoli to the sheet. Toss with the drippings. If needed, add a little avocado oil. Season with garlic salt, onion powder, white pepper, salt, and herbs. Toss again. Roast for 10 to 15 minutes. Stir. Roast another 10 to 15 minutes until vegetables are tender and browned. Rough chop the bacon and add it back in for the final 10 minutes. Recipe Ingredients: Cake 1 cup granulated sugar 1/2 cup unsalted butter, room temp 3 teaspoon freshly grated blood orange zest 4 large eggs, room temp 1 cup unbleached all-purpose flour 1 1/2 teaspoon baking powder 1/4 teaspoon sea salt 1 tablespoon vanilla bean paste 1 3/4 cup Bob’s Redmill, Unsweetened, Unsulfured cocoanut (See instructions for making homemade desiccated coconut ) 4 tablespoons freshly squeezed blood orange juice 1 Recipe of Honey Whipped Cream Garnish Candied Orange slices Recipe Directions: Pre-heat an oven to 350-degrees with an oven rack positioned in the middle. Prepare mini cake pans with butter and line bottom of pan with parchment paper and set-aside. To prepare the batter: To the bowl of a stand mixer fitted with a paddle attachment cream sugar, butter, and blood orange zest. Beat until light and fluffy, about 4 minutes. Be sure your eggs are room temp or they will curdle your butter. Add eggs one at a time, beating until combined and stopping to scrap the bowl before adding the next egg. To a bowl add the flour, baking powder, salt, and desiccated coconut, whisk to combine. Add flour mixture gradually to your creamed mixture. Add blood orange juice to the bowl and beat on low until combined, stopping to scrape bowl sides and paddle as needed. Portion cake batter out evening between mini cake pans and place in the preheated oven. Bake until a cake tester inserted in the middle of the cakes comes out clean, 20-30 minutes. Rotate pans half way through the baking time. Transfer baked cakes to a wire cooling rack for 10 minutes. Invert the pans on to a parchment lined cooling rack to avoid cakes from sticking to wire rack. All cakes to cool completely. To serve: Place on mini cake with the top of the cake facing down and the flat bottom of the cake facing up onto a plate and tort the cake. Using a pastry bag fitted with a 1M tip and filled with the whipped cream pipe stars in between the torte layers. On top of the cake pipe more stars and garnish with candied, quartered orange slices.
