Recipe Ingredients:

  • 1 lb ground chicken

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced (optional)

  • 1 can (15 oz) white beans, drained and rinsed

  • 1 can (15 oz) garbanzo beans, drained and rinsed

  • 1 can (14.5 oz) diced tomatoes packed in garlic, oregano & basil seasoning

  • 2 cups water + 2 tsp chicken bouillon powder (adjust to taste)

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • ½ tsp crushed red pepper flakes (optional, for heat)

  • ½ tsp salt (taste first since bouillon adds salt)

  • ¼ tsp black pepper

  • 1 bay leaf (optional)

  • ½ tsp sugar or honey (balances acidity from tomatoes since we don’t have tomato paste)

  • Fresh parsley or cilantro, chopped (for garnish)

Recipe Directions:

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until softened, about 5 minutes.

  2. Add garlic and cook 1 minute until fragrant.

  3. Stir in ground chicken, breaking it up, until no longer pink.

  4. Mix in smoked paprika, cumin, chili powder, red pepper flakes, salt, and pepper. Cook 1 minute to bloom spices.

  5. Pour in diced tomatoes (with juices), beans, water, and bouillon powder. Stir well.

  6. Add bay leaf if using, then bring to a simmer.

  7. Lower heat and simmer uncovered 25–30 minutes, stirring occasionally. Add sugar or honey toward the end to mellow the tomato tang.

  8. Taste and adjust seasoning. Remove bay leaf before serving.

  9. Garnish with parsley or cilantro.
