Recipe Ingredients: 1/2 cup olive oil 4 cloves garlic, chopped 1 shallot diced thinly 3 tablespoons champagne vinegar 1/2 teaspoon pink Himalayan sea salt 1/4 teaspoon ground cumin 1/4 teaspoon red pepper flakes 1/4 teaspoon freshly ground black pepper 1/2 cup fresh cilantro leaves 1/2 cup fresh oregano leaves 1/2 cup flat-leaf Italian parsley, stems removed Recipe Directions: Combine oil, garlic, shallot, vinegar, salt, cumin, red pepper flakes, black pepper, cilantro, oregano, and parsley in a blender. Pulse blender 2 to 3 times; scrape down the sides using a rubber spatula. Repeat pulsing and scraping process until a thick sauce forms. Let sit in the fridge for a few hours so the flavors develop. Hailing from Naples, the original Italian name is minestra maritata, which means “married soup”. Some say that's in relation to the “marriage” or unity of all the ingredients. We say it's just delicious. Recipe Ingredients: Meatballs 8 ounces lean ground beef 8 ounces ground pork 1/2 cup bread crumbs 1/4 cup chopped parsley 1 teaspoon minced fresh oregano or ½ teaspoon ground oregano 1/2 cup finely shredded Parmesan cheese 1 large egg, beaten 1 tablespoon olive oil Soup Ingredients 1 tablespoon olive oil 1 1/4 cups diced carrots 1 1/4 cups finely diced sweet yellow onion 3/4 cup diced celery Salt and freshly ground black pepper 6 garlic cloves 5 15 ounce cans chicken broth 1 cup dry orzo pasta 8 ounces chopped fresh spinach Finely shredded Parmesan cheese Recipe Directions: Meatballs Combine beef and pork in a large mixing bowl. Mix in bread crumbs, parsley, oregano, Parmesan, egg, 1 teaspoon salt and 1/4 tsp pepper. Gently toss and break up mixture with hands to evenly coat and distribute. Shape mixture into very small meatballs, about 3/4 inch to 1 inch and transfer to a large plate. Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat. Add half of the meatballs and cook until browned, turning occasionally to brown on all sides for about 4 minutes. Transfer meatballs to a plate and repeat process with remaining meatballs. You won't be cooking the meatballs all the way through in this step. The meatballs will continue to cook after they are added to the soup. Soup Prepare the orzo pasta according to package directions. Rinse with cold water and drain well. Set aside. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add carrots, onions and celery and sauté until veggies have softened about 6 - 8 minutes, add garlic and sauté 1 minute longer. Pour in chicken broth, season soup with salt and pepper to taste and bring mixture to a boil. Add in pasta and meatballs, reduce heat to light boil (about medium or medium-low). Cover and cook, stirring occasionally until meatballs have cooked through. Add the cooked orzo pasta. Add in the spinach during the last minute of cooking. Serve warm, sprinkle each serving with Parmesan cheese. Don't stock up on evaporated milk and white sugar! This recipe's secret ingredients make it a delicious variation of the Libby's classic recipe. Recipe Ingredients: For the crust: 2 cups unbleached flour 1/2 cup sugar 1/2 teaspoon salt 1/2 cup butter 1/4 cup Crisco All-Vegetable shortening Crushed honey roasted pecans for garnish For the filling: 3/4 cup brown sugar 2 teaspoons Saigon cinnamon 1 teaspoon pumpkin pie spice 1/8 teaspoon cloves 1/2 teaspoon salt 2 large eggs 1 1/2 cups heavy whipping cream 1 15 ounce can Libby's pumpkin Recipe Directions: Make the crust first! Stir flour, sugar and salt in a large bowl. Cut the shortening and butter into the flour mixture using a pastry blender, fork (or your hands!) until incorporated into small pieces (about the size of a pea). Gradually add cold water, one tablespoon at a time, until the dough holds together and you have a smooth ball. Cut the dough in half. NOTE: The other half will be used for the autumn leaves on the crust. Put one half of the dough on a large sheet of waxed paper and top with a second sheet of waxed paper. Use your rolling pin to roll the dough out into a circle. Remove the top piece of waxed paper. Place dough side down into a 9-inch deep dish pie pan. Bake at 350 degrees for 15 minutes. Directions for the filling: Increase oven temperature to 425 degrees. Mix brown sugar, cinnamon, pumpkin pie spice, cloves and salt in a small bowl. Beat the eggs in a large bowl. Mix in pumpkin and sugar-spice mixture. Gradually beat in the heavy whipping cream. Pour into pie shell. Bake at 425 degrees for 15 minutes. Reduce the temperature to 350 degrees. Bake 45 minutes OR, if you want to be super creative and add autumn leaves to the crust, bake for 30 minutes and add the leaves. Directions for the leaves: Use a small maple leaf cookie cutter and the second half of the pie dough. Roll out the dough and cut out the maple leaves. Use food coloring you have in the cupboard. Mix red and yellow for the orange. You can use black food color paste with a bit of water to make the veins on the leaves. Place the food coloring into separate bowls of red, orange, yellow and black. Use a small paint brush and paint the colors on the leaves. NOTE: You don't have to go out and buy an artist brush, just steal one from your kids or grandkids. Brush with egg white when done. Once the pie has baked the additional 30 minutes, take it out of the oven. Brush the crust with egg white (just enough for one leaf at a time) and place the leaf on the crust. Repeat until you have lined the entire crust with leaves. Place the left over leaves on a cookie sheet. Place in the oven with the pie and bake for 15 minutes. Let cool and sprinkle the leaves with the crushed honey roasted pecans. NOTE: If your pie splits, you can place some of the baked left over leaves on top to cover the split. Since the crust has a bit of sugar, the leaves taste like a shortbread cookie. Pile the remainders on a plate and eat with a glass of milk. Recipe Ingredients: 1 large ripe mango cubbed and frozen if doing a slushy 3 oz white rum of your choice 2 tbsp simple syrup 1/4 cup fresh lime juice 1 heaped cup of ice cubes (or 1 cup crushed ice), plus more to serve Strawberries garnish Lime slices garnish Mint garnish Recipe Directions: Chill glasses in the fridge. If using a blender: Place Daiquiri ingredients in the blender in the order listed. Blend until ice is blended. Taste test then adjust to your preference. Pour into glasses - this recipe makes the perfect amount to fill 4 martini glasses. Garnish with strawberries, lime and mint if desired. Serve cold. If not using a blender: Puree mango using a stick blender or food processor. Pour into 1 quart or larger pitcher. Add bacardi, sugar syrup and 1/2 cup water. Refrigerate until chilled. Also refrigerate the limes and glasses. Once chilled, add lime juice and ice cubes to pitcher. Stir well, then serve, straining out the ice cubes. Enjoy!
