Lemon Squares

Lemon lovers rejoice!

This crowd sized dish of our zesty lemon squares is a fast and tasty dessert to take to your next family gathering or pot luck.


For the crust:

  1. Preheat oven to 350 degrees.

  2. Combine the flour, sugar and salt together in a large bowl.

  3. Cut in the butter and shortening until crumbly.

  4. Pat into a greased 15x10x2 baking pan.

  5. Bake 16-20 minutes or until set and top is lightly golden brown.

For the filling:

  1. Combine sugar, baking powder, cornstarch and salt in a bowl.

  2. Add eggs and lemon juice and beat until foamy.

  3. Once crust has been removed from the oven, pour the filling mixture on top of the hot crust.

  4. Return to oven and bake 16-20 minutes or until set and the top is golden brown.

  5. Remove from oven and dust with powdered sugar.

  6. Allow to cool and cut into squares.


For the crust:

3 cups flour

  • 1/2 cup sugar

  • 1/4 cup shortening

  • 1 1/4 cup butter

  • 2 tablespoons cold water

For the filling:

  • 6 eggs, beaten

  • 3 cups sugar

  • 1 tablespoon cornstarch

  • 3/4 cup fresh lemon juice

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • Powdered sugar
