- Rustic Oat Bran Bread

Recipe Ingredients: 1 3/4 cup water at 110 degrees 2 1/2 cups flour 3 cups oat bran 2 packages active dry yeast 1/2 cup oil 1/4 cup honey 1/4 cup brown sugar 2 teaspoons salt 1 cup oatmeal 1 egg white, beaten Recipe Directions: Place the 110 degree water into the mixing bowl of a stand mixer. Add yeast to the water and combine. Add oil, honey, brown sugar and oats. Add salt. Add all but 1 1/2 cups of the flour and oat bran mixture to the mixing bowl. Mix with dough hook and scrape sides during mixing. Once fully combined, gradually add remaining flour and oat bran mixture. Knead on medium low for 8-10 minutes until the dough is smooth and elastic. Grease a large glass bowl with butter. Turn the dough into the glass bowl and turn until it is coated with butter. Cover the bowl with a clean towel and set in a warm place (you will need to make sure the temperature is 80-85 degrees for optimal results). Once the dough has doubled in size (this will take about 1 1/2 hours), turn the dough onto a lightly floured surface. Gently knead into a smooth ball. Divide in two and form into loaves. Grease two bread pans. Place the dough loaves in the bread pans. Let rise until double (about an hour). Bake at 375 degrees until golden brown. I usually make a 9 inch pie, however, my son loves the individual pies the best because he's such a fan of the crust. Use store bought crust to save some time! Recipe Ingredients: Turkey stock 2 cups cooked turkey meat 2 tablespoons flour for each cup of stock 2 tablespoons butter for each cup of stock 1 pound bag of baby carrots 1/2 bag frozen peas Pie crust for a double crust pie (store bought our use one of our delicious pie crust recipes !) Recipe Directions: Line a 9 inch pie dish with one crust. Par bake the crust in the oven for 10 mins at 375 degrees. You can use pie weights to weigh the dough down or dock it with a fork. Once par baked, remove and set aside. Par boil the baby carrots, drain, rinse with cold water and set aside. In a large sauce pan melt butter and use a whisk or wooden spoon to incorporate the flour, stirring constantly until it bubbles. Gradually add in the stock until its the consistency of gravy. Add a half bag of frozen peas and the cooked carrots to the mixture. You can be creative with your veggies! Try adding potato cubes, frozen corn or broccoli florets. Next add the turkey to the stock gravy. Pour into the par baked pie crust. Top with remaining pie crust. Bake at 375 degrees until the crust is golden brown and the filling is bubbly. Variations: If you're cooking for a large group of people, place the turkey filling in a 9x13 pan. It’s quick to make, packed with flavor, and can easily stand on its own as the main event. The chorizo adds a little heat and heartiness, making it feel more like an entree. If you’re looking for a vegetarian option, no worries! Swap out the chorizo for caramelized sweet yellow onions (I’ve got a great recipe for those here ), and you’ve still got a delicious meal. Throw in some breadcrumbs, maybe a side of quinoa or farro, and you’ve got dinner in no time. Test Notes: Kids love it dipped in homestyle ranch. Make sure you make extra as they tend to get gobbled up fast! Recipe Ingredients: Fresh zucchini String cheese Chorizo ground sausage Spices Italian bread crumbs Salt and pepper Ranch for dipping Recipe Directions: Boil the zucchini gently in salted water for 5-6 minutes. Remove from water and let cool. Cut the zucchini in two, and scoop out the pulp. Place on barbecue grilling pan. Salt and pepper to taste. Split the string cheese in two and layer in the zucchini boat. Top with Chorizo sausage. Sprinkle top with Italian bread crumbs. Place the pan on the hot grill and lower cover. Cook until sausage is done and cheese is melted. Serve hot with Ranch dipping sauce. Recipe Ingredients: 1 ½ cups Aborio rice 1 cup white wine 3 tablespoons butter 1 whole chopped onion 1 package of Baby Bella mushrooms, sliced 32 oz veggie or chicken stock Mix of Asiago, Parmesan and Romano cheeses, freshly grated Fresh parsley Recipe Directions: In a medium saucepan over medium heat, bring broth to a simmer. Reduce heat to low. Melt 2 tablespoons butter in a large pot or Dutch oven. Add onion and cook until translucent, about 5 minutes. Add mushrooms and cook until the mushrooms have softened and are golden, about 4 more minutes, then season with salt and pepper. Remove mixture from the pot. Melt remaining tablespoon of butter in the pot and add the arborio rice, stirring quickly. Cook until the grains are well-coated and smell slightly toasty, about 2 minutes. Add the wine and cook until the wine has mostly absorbed. Add about 1 cup hot broth. Stirring often, cook until the rice has absorbed most of the liquid. Add remaining broth about 1 cup at a time, continuing to allow the rice to absorb each addition of broth before adding more. Cook until the risotto is al dente and creamy, but not mushy. (You might not need all the broth.) Add the mushroom mixture back into the rice. Stir in Parmesan and garnish with parsley. Serve warm.
