Directions:

  1. Mix coconut milk with the cocoa poweder, espresso powder and vanilla bean paste. Mix well and set aside.

  2. In the stand of a mixer, cream your vegan butter untill smooth.

  3. Next add in the coconut milk mixture and whip until incorporated, stopping to scrape the sides of the mixer bowl down. Mix until just combined.

  4. Add the salt to your powdered sugar and slowly add to th mixer bowl untill mixture has been completely combined. Whip with paddle attachment for 5 mins until nice and smooth and fluffy.

  5. Use on your favorite cupcake or cake and enjoy!



Ingredients
  • 8 ounces Vegan Butter

  • 3.5 ounces of Coconut Milk

  • 5-8 tbsp Dutch Processed Dark Cocoa Powder (if you want it extra chocolatey, add all 8 tbsp)

  • 1 tsp instant Italian Espresso Powder

  • 1-2 tsp Vanilla Bean Paste

  • 3 cups powdered sugar

  • 1/2 tsp salt (optional)
