Rustic Oat Bran Bread
Learn to create a high fiber oat bran bread.
Recipe Ingredients:
1 3/4 cup water at 110 degrees
2 1/2 cups flour
3 cups oat bran
2 packages active dry yeast
1/2 cup oil
1/4 cup honey
1/4 cup brown sugar
2 teaspoons salt
1 cup oatmeal
1 egg white, beaten
Recipe Directions:
Place the 110 degree water into the mixing bowl of a stand mixer. Add yeast to the water and combine.
Add oil, honey, brown sugar and oats. Add salt.
Add all but 1 1/2 cups of the flour and oat bran mixture to the mixing bowl.
Mix with dough hook and scrape sides during mixing.
Once fully combined, gradually add remaining flour and oat bran mixture.
Knead on medium low for 8-10 minutes until the dough is smooth and elastic.
Grease a large glass bowl with butter.
Turn the dough into the glass bowl and turn until it is coated with butter.
Cover the bowl with a clean towel and set in a warm place (you will need to make sure the temperature is 80-85 degrees for optimal results).
Once the dough has doubled in size (this will take about 1 1/2 hours), turn the dough onto a lightly floured surface.
Gently knead into a smooth ball.
Divide in two and form into loaves.
Grease two bread pans.
Place the dough loaves in the bread pans.
Let rise until double (about an hour).
Bake at 375 degrees until golden brown.
