It's made with vegetables, often with the addition of pasta or beans, sometimes both. You can get creative with this soup! Load it up with in season veggies, this soup can become an any season favorite. Recipe Ingredients: 4 tablespoons olive oil 1 sweet yellow onion, chopped 2 medium carrots, peeled and chopped 2 medium ribs celery, chopped 1/4 cup tomato paste 2 cups chopped seasonal vegetables vegetables (potatoes, yellow squash, zucchini, parsnips, green beans or peas) 5 minced garlic cloves ½ teaspoon dried oregano ½ teaspoon dried thyme 1 large can (28 ounces) diced tomatoes, with liquid 32 ounces vegetable broth 2 cups water 1 teaspoon salt 2 bay leaves Pinch of red pepper flakes Freshly ground black pepper 1 cup elbow or small shell pasta 1 can (15 ounces) Great Northern or Cannellini beans 2 cups baby spinach 1 teaspoons lemon juice Freshly grated Parmesan cheese, for garnishing Recipe Directions: Cook the pasta al dente according to package instructions. Rinse with cold water and drain well. Set aside. Place 3 tablespoons of olive oil in a large Dutch oven or pot over medium heat. Once the oil has heated, add the chopped onion, carrot, celery, tomato paste and a pinch of salt. Sauté until the veggies are soft and the onions are translucent. Add the seasonal vegetables, garlic, oregano and thyme. Cook until the herbs are aromatic, about 2 minutes. Pour in the diced tomatoes and juices, broth and water. Add the salt, bay leaves and red pepper flakes. Raise heat to medium-high and bring the mixture to a boil and cover. Reduce heat to maintain a gentle simmer. Cook for 15 minutes, then remove the lid and add the pasta, beans and greens. Continue simmering, uncovered, for about 5 minutes or until the greens are tender. Remove the pot from the heat. Remove the bay leaves. Stir in the lemon juice and remaining tablespoon of olive oil. Taste and season with additional salt and pepper as desired. Garnish each bowl of soup with fresh grated Parmesan. Serve with warm bread sticks or Italian bread. Recipe Ingredients: 1 cup Sugar 1 cup Water 1 Small Fresh Seedless Watermelon Recipe Directions: Prep the Watermelon: Start by cutting your seedless watermelon into chunks. You’ll need about 4 cups of watermelon chunks. Optional: Make simple syrup by using equal parts sugar to equal parts water add to a saucepan and boil. Remove from heat and let it cool down to room temperature. Alternatively: Instead of simple syrup, add a tablespoon of sugar or a squeeze of lime juice if you prefer a less sweet sorbet. Blend Until Smooth: Place the watermelon chunks in a blender or food processor. Blend until the mixture is completely smooth and no chunks remain. Freeze the Mixture: Pour the watermelon puree into the Ninja Creami pint container, leaving a little room at the top (don’t fill it to the brim). Place the lid on the pint container and freeze it upright for at least 24 hours. This allows the mixture to solidify completely, which is essential for the Ninja Creami to work its magic. Cube the squash and saute it in butter you have let get nice and golden brown butter. add in fresh sage for an earthy flavor. We like to toss ours with homemade gnocchi but regular pasta would be a good choice as well. Trust us, your taste buds will thank you. This dish is perfect for fall and winter as a side. Its one of the recipes featured in our Winter gnocchi class and even makes a delicious Thanksgiving side dish. So there you have it, some butternut squash recipe fun to spice up your winter cooking. Recipe Ingredients: 5 tablespoon Unsalted Butter 2 cups cubbed Butternut Squash (cut ¼ inch pieces) Sea Salt & Freshly Ground Pepper 1 tablespoon Sherry Vinegar 1 tablespoon thinly sliced sage leaves Freshly grated Parmigiano-Reggiano cheese for serving Recipe Directions: In a large skillet set over medium-high heat add 1 tablespoon of butter. When butter melts and foam subsides, add squash, season with salt and pepper and let caramelize and tender. About 7-10 mins. Transfer squash to a plate. Return skillet to heat and add remaining 4 tablespoons of butter. Melt butter stirring occasionally until the milk solids turn golden brown and the butter takes on a nutty aroma. Stir in sherry vinegar and sage. Taste and adjust seasoning with salt and pepper. Fold in Squash and reduce heat too low. Toss well with parmesan and garnish with parmesan. Enjoy!
