Hailing from Naples, the original Italian name is minestra maritata, which means “married soup”. Some say that's in relation to the “marriage” or unity of all the ingredients. We say it's just delicious. Recipe Ingredients: Meatballs 8 ounces lean ground beef 8 ounces ground pork 1/2 cup bread crumbs 1/4 cup chopped parsley 1 teaspoon minced fresh oregano or ½ teaspoon ground oregano 1/2 cup finely shredded Parmesan cheese 1 large egg, beaten 1 tablespoon olive oil Soup Ingredients 1 tablespoon olive oil 1 1/4 cups diced carrots 1 1/4 cups finely diced sweet yellow onion 3/4 cup diced celery Salt and freshly ground black pepper 6 garlic cloves 5 15 ounce cans chicken broth 1 cup dry orzo pasta 8 ounces chopped fresh spinach Finely shredded Parmesan cheese Recipe Directions: Meatballs Combine beef and pork in a large mixing bowl. Mix in bread crumbs, parsley, oregano, Parmesan, egg, 1 teaspoon salt and 1/4 tsp pepper. Gently toss and break up mixture with hands to evenly coat and distribute. Shape mixture into very small meatballs, about 3/4 inch to 1 inch and transfer to a large plate. Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat. Add half of the meatballs and cook until browned, turning occasionally to brown on all sides for about 4 minutes. Transfer meatballs to a plate and repeat process with remaining meatballs. You won't be cooking the meatballs all the way through in this step. The meatballs will continue to cook after they are added to the soup. Soup Prepare the orzo pasta according to package directions. Rinse with cold water and drain well. Set aside. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add carrots, onions and celery and sauté until veggies have softened about 6 - 8 minutes, add garlic and sauté 1 minute longer. Pour in chicken broth, season soup with salt and pepper to taste and bring mixture to a boil. Add in pasta and meatballs, reduce heat to light boil (about medium or medium-low). Cover and cook, stirring occasionally until meatballs have cooked through. Add the cooked orzo pasta. Add in the spinach during the last minute of cooking. Serve warm, sprinkle each serving with Parmesan cheese. Recipe Ingredients: 1 package Rhodes frozen cinnamon roll dough with icing packets 1/2 cup brown sugar and white sugars 1 stick butter, melted 2 teaspoons Saigon cinnamon Green, purple and yellow sanding sugar (*Directions below on how to make your own colored sanding sugar using white sanding sugar and powdered colors.) Small plastic baby (Note: I don't actually bake the baby into the cake.) Large Bundt pan Recipe Directions: Place the frozen Rhodes cinnamon rolls on a cookie sheet and allow the rolls to thaw. *If you do not have colored sanding sugars you can make your own. Place white sanding sugar in three bowls. Add purple powdered color to one bowl. Place in a Ziplock and shake to mix. Pour back into the bowl. Repeat for green and yellow colors. Grease the Bundt pan with butter. Mix the brown and white sugars and cinnamon together in a separate bowl. Melt the butter and allow to cool slightly. Roll the cinnamon rolls in the butter, and then in the sugar mixture. Lay the rolls in the pan as shown in the picture. Place the Bundt pan in a warm place to rise. NOTE: If you set your oven to the lowest temperature and allow it to heat for 5 minutes, you can use it as your proofing area. Just be sure to turn the oven off before you put the pan in to proof! Allow the dough to rise until it has doubled (approximately 1 1/2 hours). Take out of oven. Preheat oven to 350 degrees. Bake for 30-35 minutes. The top will be nicely browned. Remove from oven and invert on a large plate. Allow to cool for 5 minutes. Open the icing packets and drizzle over the top of the cake. Find a spot to hide the baby. Make sure you cover your tracks! In an oven safe braising dish, mix the strained tomatoes, vinegar, basil, salt and pepper. Heat the tomato mixture on the stove top over medium heat until it comes to a boil. Turn off the heat, add the roasted sausage to the tomato braising liquid, cover and return to the oven. Allow to braise in the oven for 1 hour. Remove from oven and let stand for 10 minutes. Enjoy!
