Ingredients: For the cake: 1/2 cup butter 1 cup sugar 1 teaspoon salt 1 teaspoon vanilla bean paste 2 large eggs 1/2 cup Hershey's Special Dark Cocoa 2 cups unbleached flour 1 tablespoon cornstarch 3 tablespoons buttermilk powder 1 teaspoon baking powder 1/2 teaspoon baking soda 1 cup milk 12 ounce bag chocolate chips For the filling: 3 tablespoons meringue powder 1/2 cup milk 2 cups powdered sugar 1 teaspoon vanilla bean paste 3/4 cup shortening (substitute 3/4 cup butter for richer flavor) Directions: For the cake: Preheat oven to 400 degrees. Beat together the butter, sugar, salt and vanilla in a large mixing bowl. Beat in the eggs one at a time. Scrape the bottom and sides of the bowl after each addition. Sift together the cocoa, flour, cornstarch, buttermilk powder, baking powder and baking soda. Add dry mixture to the butter mixture, alternating with the milk. Beat until all ingredients are combined. Stir in the chocolate chips. Drop 1/4 cup batter on parchment lined sheets, leaving two inches between each cake. Bake in preheated oven for 10-12 minutes until set. Use tooth pick or cake tester to ensure center is done. Remove from oven and cool for 5 minutes before removing from baking sheet. Ingredients: Fresh corn on the cob, cleaned Pink Himalayan sea salt Fresh ground pepper Fresh limes Cotija cheese Butter Ground cumin Cilantro, thinly sliced Directions Place corn on the cob in a large pot and bring to boil and cook 2-3 minutes. Remove from water and allow to cool for a few minutes. Place on the grill. Rotate to get the golden grill marks. Transfer to serving platter. Brush generously with butter. Squeeze on lime juice. Sprinkle ears with ground cumin, pink Himalayan sea salt and ground pepper. Add a generous handful of Cotija cheese over the ears of corn. Top with fresh, thinly sliced cilantro. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make White Chocolate Cream Cheese Frosting What you are creating: White chocolate and cream cheese join together to create a delicious frosting for your cakes and cookies. Ingredients: 6 ounces pasteurized egg whites 9 ounces granulated sugar 8 ounces cream cheese, room temperature 12 ounces unsalted butter 1/2 pound of powdered sugar (or more if you want the frosting firmer) 4 ounces of melted white chocolate Splash of vanilla Directions: Place egg whites and granulated sugar into a double boiler pan and heat until sugar has dissolved into the egg whites. Place into the bowl of a stand mixer and whisk until med peaks. Next, add room temperature cream cheese to the mixture, along with the unsalted butter and mix on low speed until incorporated. Place the white chocolate in a small bowl and microwave to melt. Set the power to 50 percent. Heat for 30 seconds, then take out and stir. Continue microwaving in 30 second intervals until melted. Add the white chocolate. Make sure it has cooled down but is still pourable before adding. Add a splash of vanilla. Beat in the powdered sugar until you get a medium consistency. This versitile recipe is best when made with freeze dried fruit. cream scones Fresh blueberries tend to bleed when added to a quick bread recipe. We use freeze dried blueberries to our cream scones. They add a delicious extra rush of flavor and maintain their color and consistency. Our cream scones develop a wonderful texture if the dough is frozen overnight. Freeze individual scones, and then bake as many as needed straight for the freezer to accompany breakfast, brunch or dinner. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Cream Scones What you are creating: Our cream scones are light on the inside with a crunchy exterior. They bake best if you freeze the dough overnight. Add any freeze dried fruit to give your scone an extra burst of flavor. Ingredients: ½ cup sugar 3 ¾ cup bread flour, or pastry flour 2 teaspoons baking powder 2 teaspoons salt 1 cup freeze dried blueberries 2 ½ cups heavy cream, chilled Cooking spray for greasing Egg wash ( 1 large egg whisked with 2 tablespoons heavy cream) Directions: Combine the sugar, flour, baking powder and salt in a stand mixer fitted with the paddle attachment. Mix on medium speed until well blended, about 1 minute. Add the cream and mix on medium speed until just combined. Remove the dough from the mixer, and carefully blend the freeze dried blueberries into the dough. Pat into a 10-inch round ¼ inch thick, and divide into 12 equal wedges. Wrap in plastic and freeze for at least 4 hours, or until solid. Once dough is frozen, preheat the oven to 350 degrees. Lightly grease a baking sheet. Arrange the frozen scones on the baking sheet, brush with egg wash, and bake until golden brown, 35-40 minutes. Let the scones cool on the baking sheet for a few minutes before transferring to a wire rack. Let cool completely before serving. Makes approximately 2 dozen scones. Variations: Substitute blueberries with 2 tablespoons grated orange zest and 1 cup dried cranberries. Substitute any freeze dried fruit for the blueberries. Related Projects:
