Recipe Ingredients: 1 sheet puff pastry, thawed 2 heaping tablespoons basil pesto ¼ cup grated Parmesan cheese Flour (for rolling, if needed) Recipe Directions: Preheat oven to 400°F. Line a baking sheet with parchment paper. Roll out the puff pastry slightly on a floured surface. Spread pesto evenly over the pastry using an offset spatula. Sprinkle Parmesan cheese on top. I couldn't wait to get to Grandma's house and pull one of her delicious cookies out of the glass cookie jar. Her cookies were slightly crunchy around the edges and chewy in the middle. No other cookie has compared to hers! Recipe Ingredients: 1 cup butter flavored or regular shortening 1 1/2 cups white sugar 1/2 cup brown sugar, firmly packed 2 eggs 1 teaspoon vanilla 2 1/4 cups flour 1 teaspoon baking soda 1 teaspoon salt 1 package semi-sweet chocolate chips Recipe Directions: In a large bowl, cream the shortening, sugars, vanilla and eggs together until fluffy. Shift dry ingredients together. Gradually stir into the creamed mixture. Fold in the chocolate chips. Use an ice cream scoop to drop the cookies onto the cookie sheet. Make sure the dough is even with the top of the scoop. Bake at 375 degrees for 10-12 minutes. When you take the pan out of the oven, drop it on the counter. This will make the cookie flatten a bit and it will be extra chewy! Allow the cookies to cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely. It took us years to find a decent fried rice recipe. This one is adapted from the menu of a Chinese restaurant that was located in Bremerton, Washington. While the restaurant is no longer open, I will cherish the times I sat in the back kitchen and watched Chef Henry cook up this wonderful dish! Recipe Ingredients: 2 cups cooked white rice 2 eggs, beaten 4 green onions chopped (reserve 1 for garnish) 1/4 cup chopped grilled chicken 1 tablespoon sugar 1-2 tablespoons soy sauce 1 tablespoon oil (for stir frying) Recipe Directions: Heat oil in a wok or large frying pan. Add beaten eggs and stir until half cooked. Add rice and stir until blended. Stir in sugar and soy sauce. Add grilled chicken and green onions. Cook until thoroughly blended. Garnish with reserved green onion. Variation Substitute fast food Asian white rice and grilled chicken for a quick and easy meal! Recipe Ingredients: 2 large sweet yellow onions 4 tablespoons unsalted butter ¼ cup oil ¼ teaspoon ground cayenne pepper 1 teaspoon kosher salt ½ teaspoon freshly ground black pepper 4 ounces cream cheese, at room temperature ½ cup sour cream ½ cup Best Foods mayonnaise Recipe Directions: Cut onions in half and slice into thin half rounds (you will have about three cups). Heat butter in oil in a large pan over medium heat. Add onions, cayenne, salt and pepper. Sauté for 10 minutes. Reduce heat to medium-low and cook, stirring occasionally, for 20 minutes. The onions should be browned and caramelized. Remove from heat and place onions in a strainer until cool. Place cream cheese, sour cream and mayonnaise in a stand mixer bowl with paddle attachment. In this video, I show you how to create a salami rose, layer cheeses, and add the perfect mix of crackers and toppings. This setup works for a cozy night in, a holiday gathering, or just a snack. To make the salami rose, you’ll need a small cup and thinly sliced salami. Layer the pieces around the rim, slightly overlapping each one, until the center is full. Flip it over, and you’ve got a perfect salami rose. For the board, I’m using my homemade salami rolls, a cheese ball, blueberry goat cheese, Kerrygold cheese, Brie, and a mix of crackers. Candy pecans add a sweet crunch. Arrange everything in small clusters, filling in gaps with crackers and extras. This board is quick to put together and easy to customize. Swap cheeses, add fruit, or mix in your favorite spreads. Try it for your next gathering and enjoy! Recipe Ingredients: 10-12 slices of salami 1 small cup (for shaping) 1 small cheese ball 2 oz blueberry goat cheese 2 oz Kerrygold cheese 2 oz Brie cheese 10-12 assorted crackers ¼ cup candy pecans Recipe Directions: Take a small cup and fold each salami slice halfway over the rim, slightly overlapping the previous piece. Continue layering until the center is full. Flip the cup over to release the salami rose. Place the salami rose on a serving board. Add the cheese ball, blueberry goat cheese, Kerrygold cheese, and Brie to the board. Cut parchment strips if needed to keep soft cheeses separate. Arrange crackers around the cheeses in small clusters. Sprinkle candy pecans in open spaces for a sweet crunch. Serve and enjoy.
