Our smashed potatoes are great with Old Bay seasoning or you can jazz them up with some truffle zest. Recipe Ingredients: 1 1/2 pounds fingerling or baby red potatoes, evenly sized Kosher salt 1/4 cup olive oil 2-3 garlic cloves, minced 2 teaspoons Old Bay seasoning or Truffle zest Freshly ground black pepper 2 tablespoons chives, chopped Finishing sea salt (Maldon) Recipe Directions: Add the potatoes to a large saucepan or Dutch oven set over medium-high heat, and cover with at least 1 inch of cold water; season with salt. Bring to a boil, then reduce the heat to a simmer and cook the potatoes until almost cooked through, about 10 minutes. Drain the potatoes and let cool until room temperature. When completely cooled, place in fridge for about 30 mins. Once cool, place the potatoes on a cutting board and gently smash with the back of a large cup. The potatoes should remain together and be flattened to about 1/3-inch thickness. In a small bowl, stir together the olive oil, garlic, seasoning or zest, salt and pepper. Generously brush the oil mixture on both sides of the smashed potatoes. Preheat a cast-iron skillet over medium-high heat. Cast--iron will give you a really nice crust on the potatoes. Add the potatoes a baking sheet pan, being careful not to break the potatoes up. Cook until crisp, 2 to 3 minutes per side. Transfer the potatoes to a serving plater, top with chives and finishing sea salt. Enjoy! Add chicken broth and cornstarch and stir until cornstarch is blended. Add apple cider vinegar, brown sugar, and soy sauce. Bring mixture to a boil over medium heat. Stir constantly until mixture has thickened. Pour half over the hot chicken. Garnish with pineapple tidbits. Recipe Ingredients: 2 ½ cups of leeks, white and light green parts only, chopped and washed thoroughly to remove any sand 2/3 cup of carrots, peeled and rough chopped (I like the organic tri-colored carrots) ¾ cup celery root, peeled and cut into 1/4-inch pieces ½ cup parsley leaves and thin stems 2 garlic cloves grated on a micro plain 3 tablespoons dried minced onions 2 tablespoons sea salt 1 ½ tablespoons tomato paste 3 tablespoons Bragg liquid aminos 1 bay leaf (see tip) Recipe Directions: Place all veggies, herbs, and salt (if using ice trays reduce salt by half) into a food processor and blitz until veggies turn into a fine smooth paste. Add in tomato paste and liquid aminos and blitz until well incorporated. Place in airtight container and add a layer of plastic wrap down onto the base prior to putting a lid on it if no freezing in ice cube trays. Stores in freezer for up to 6 months. Tip: If you like bay leaves add one bay leaf to your hot water and let steep prior to adding in your veggie base concentrate. Once steeped remove and heat water back up in microwave for 30 seconds and then add the veggie base concentrate to the hot water. We bring garlic, lemon and butter together for the baste. The final step before the chicken is complete, we broil it for a delicious crust. Recipe Ingredients: 4-6 pound whole chicken, (remove giblets and neck from cavity!) 1/4 cup butter, melted 3 tablespoons avocado or olive oil 1/4 cup white wine 1 lemon, halved Salt and freshly ground pepper to taste 4 garlic cloves, minced Recipe Directions: Preheat oven to 400 degrees. Line a baking tray with foil, or lightly grease a roasting pan. Discard neck from inside the cavity and remove any excess fat. Pat dry with a paper towel. Pour the avocado or olive oil, melted butter, wine (if using) and the juice of half the lemon under the skin, inside the cavity and on top of the chicken. Season chicken liberally on the outside and inside the cavity with salt and pepper. Sprinkle over the parsley. Rub the minced garlic over the chicken and under the skin. Tie the legs together with kitchen string. Place breast-side down into a baking tray or roasting pan. Roast for 1 hour. Turn the chicken breast side up and return to oven. Bake and baste often, until juices run clear when chicken thigh is pierced with a skewer. Baste again and then broil for 2-3 minutes or until golden. Remove from the oven, cover with foil and let stand for 10 minutes before serving. Place chicken on serving dish and drizzle with pan juices. Cut the remaining lemon half into wedges or slices and use as garnish. I usually make a 9 inch pie, however, my son loves the individual pies the best because he's such a fan of the crust. Use store bought crust to save some time! Recipe Ingredients: Turkey stock 2 cups cooked turkey meat 2 tablespoons flour for each cup of stock 2 tablespoons butter for each cup of stock 1 pound bag of baby carrots 1/2 bag frozen peas Pie crust for a double crust pie (store bought our use one of our delicious pie crust recipes !) Recipe Directions: Line a 9 inch pie dish with one crust. Par bake the crust in the oven for 10 mins at 375 degrees. You can use pie weights to weigh the dough down or dock it with a fork. Once par baked, remove and set aside. Par boil the baby carrots, drain, rinse with cold water and set aside. In a large sauce pan melt butter and use a whisk or wooden spoon to incorporate the flour, stirring constantly until it bubbles. Gradually add in the stock until its the consistency of gravy. Add a half bag of frozen peas and the cooked carrots to the mixture. You can be creative with your veggies! Try adding potato cubes, frozen corn or broccoli florets. Next add the turkey to the stock gravy. Pour into the par baked pie crust. Top with remaining pie crust. Bake at 375 degrees until the crust is golden brown and the filling is bubbly. Variations: If you're cooking for a large group of people, place the turkey filling in a 9x13 pan. They are moist and have chunks of green apple with a tender crumb. So grab your favorite kind of apples and make these this weekend! Recipe Ingredients: 1 cup sugar (more for coating doughnuts) 4 teaspoons baking powder 1 1/2 teaspoons salt 1/4 teaspoon nutmeg 1/2 teaspoon Saigon cinnamon (more for coating doughnuts) 2 eggs 1/4 cup unsalted butter, melted 7 ounces of milk 1 ounce apple cider vinegar 1 tsp LorAnn Vanilla Bean Paste 1 chopped Granny Smith apple 4 cups flour (plus more if dough is sticky) Recipe Directions: Whisk together milk, sugar and vinegar. Once combined add eggs and whisk. In separate bowl combine flour, baking powder, salt, nutmeg and cinnamon. Slowly combine with your wet ingredients. Once combined, fold in your chopped apples. Roll dough out and use a biscuit cutter to cut out circles. Using a smaller biscuit cutter, cut out center to create a ring. Save centers to fry up as doughnut holes! Fry doughnuts in oil until golden brown. Move to a rack to drain excess oil. While still hot, toss in a bowl of cinnamon and sugar. Tip: For added deliciousness, try melting some Peter's Caramel and drizzling over the top of the doughnuts.
