ALL RECIPES BAKING RECIPES CANDY RECIPES COCKTAIL RECIPES COOKING RECIPES Create Account Questions Recipes Video Classes Zoom Classes Smashed Potatoes 15 mins 4 Recipe you are creating: Smashed Potatoes Smashed potatoes make a great side dish any day of the week. Our smashed potatoes are great with Old Bay seasoning or you can jazz them up with some truffle zest. Recipe Ingredients: 1 1/2 pounds fingerling or baby red potatoes, evenly sized Kosher salt 1/4 cup olive oil 2-3 garlic cloves, minced 2 teaspoons Old Bay seasoning or Truffle zest Freshly ground black pepper 2 tablespoons chives, chopped Finishing sea salt (Maldon) Recipe Directions: Add the potatoes to a large saucepan or Dutch oven set over medium-high heat, and cover with at least 1 inch of cold water; season with salt. Bring to a boil, then reduce the heat to a simmer and cook the potatoes until almost cooked through, about 10 minutes. Drain the potatoes and let cool until room temperature. When completely cooled, place in fridge for about 30 mins. Once cool, place the potatoes on a cutting board and gently smash with the back of a large cup. The potatoes should remain together and be flattened to about 1/3-inch thickness. In a small bowl, stir together the olive oil, garlic, seasoning or zest, salt and pepper. Generously brush the oil mixture on both sides of the smashed potatoes. Preheat a cast-iron skillet over medium-high heat. Cast--iron will give you a really nice crust on the potatoes. Add the potatoes a baking sheet pan, being careful not to break the potatoes up. Cook until crisp, 2 to 3 minutes per side. Transfer the potatoes to a serving plater, top with chives and finishing sea salt. Enjoy! It's so simple, but why was it so hard to find a good recipe? The problem was solved when a neighbor served up her mom's version at a community pot luck and was willing to share her recipe. We added our own spin and came up with a winning recipe that is simple, fast and delicious. Recipe Ingredients: 1 tablespoon avocado oil 2 tablespoons sweet yellow onion 1 tomato bouillon cube or 2 teaspoons granulated bouillon 1 cup long-grain white rice 1/12 cups water Recipe Directions: Sauté the onion in the avocado oil until lightly browned. Add the rice to the onion and cook until rice begins to brown, stirring constantly. Add 1 1/2 cups water and the tomato bouillon to the pan. Turn on high and stir until the bouillon has dissolved. Cover and cook for 20 minutes or until the rice is tender. Even better with this fun decorative crust made by our our resident Jr. Chef Rylan. The decorative floral pie crust is easy to make, kid friendly, kid tested, and a wonderful family project. Follow Rylan's process below and enjoy! Recipe Ingredients: Supplies Needed: Pie dough (homemade or store bought, rolled out) Pie filling of your choice Any type of flower shaped cookie or fondant cutter Ball tool Recipe Directions: Take your rolled out pie dough and use a flower cutter of your choice to cut out flowers. A 9" round disk of pie dough was used for this project, and using a 1.5" flower cutter, yielded enough flowers to cover the whole pie and extra to bake up for the middle flowers and to enjoy for a snack! :) The process is simple, slightly over lap the flowers as your work your way around the crust. Give each flower a light push in the center of the petal to ensure the adhere to each other. We opted not to egg wash our flowers as we were staying egg free, but you certainly brush each flower with and egg wash. For step-by-step photo instructions visit the project page [ here ].
