Recipe Ingredients: 6 ounces pasteurized egg whites 9 ounces granulated sugar 8 ounces cream cheese, room temperature 12 ounces unsalted butter 1/2 pound of powdered sugar (or more if you want the frosting firmer) 4 ounces of melted white chocolate Splash of vanilla Recipe Directions: Place egg whites and granulated sugar into a double boiler pan and heat until sugar has dissolved into the egg whites. Place into the bowl of a stand mixer and whisk until med peaks. Next, add room temperature cream cheese to the mixture, along with the unsalted butter and mix on low speed until incorporated. Place the white chocolate in a small bowl and microwave to melt. Set the power to 50 percent. Heat for 30 seconds, then take out and stir. Continue microwaving in 30 second intervals until melted. Add the white chocolate. Make sure it has cooled down but is still pourable before adding. Add a splash of vanilla. Beat in the powdered sugar until you get a medium consistency. This perfect summer cupcake combines the flavors of vanilla and lime. It also has some unique ingredients (like corn flour!) and is garnished with poppy seeds. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Lime Poppy Seed Cupcakes What you are creating: Lime poppy seed cupcakes using a combination of corn flour with self rising flour. You will also create lime buttercream and lime simple syrup. Ingredients: Batter: 200 grams unsalted butter 220 grams sugar Zest of 2 limes 3 eggs 1 teaspoon vanilla extract 1⁄2 teaspoon salt 300 grams self rising flour 75 grams corn flour 1 cup milk 40 grams poppy seeds Buttercream Icing: 250 grams unsalted butter 500 grams powdered sugar Juice of 1 small lime Lime Syrup: 220 grams bakers sugar 250 ml lime juice Directions: Preheat oven to 175 degrees. Soften butter to room temperature, add sugar and lime zest and beat for 3 minutes. Add eggs, vanilla and salt, mixing on slow speed until incorporated. Sift in flour; add poppy seeds and milk, mix on slow speed until incorporated, scrape down sides of bowl and mix on medium for 30 seconds. Spoon mixture into cupcake papers; bake for 35 min or until tooth pick comes out clean. Cool. To make Lime syrup – Combine sugar and juice in a small saucepan over medium heat; stir until sugar dissolves; bring to a boil and simmer for 5 minutes until thickens slightly. Spoon over cupcakes. To make butter cream – soften butter to room temp and add to mixing bowl with icing sugar & lime juice. Beat for 3-5 minutes until light. Pipe onto cupcakes. Makes approximately 2 dozen cupcakes. Recipe Ingredients: 2 cups unsalted butter 2 cups bakers sugar 2 eggs 1 teaspoons vanilla extract 2 teaspoons Lemon Extract (LorAnn Bakery Emulsions) 5 1⁄2 to 6 cups all purpose flour 3 teaspoons baking powder 1 teaspoon salt Recipe Directions: In a 5qt mixer or a large bowl, cream the butter and sugar until fluffy. Add the eggs, mix. Add vanilla and Lemon extract, mix. In a separate bowl, mix the flour, baking powder and salt together. Gradually add to the butter mixture until incorporated. TIP: For 3D cookies it is best to hold back a bit on the flour (5 1⁄4 or 5 1⁄2 cups). Scrape bowl and mix until dough comes together. Wrap dough in plastic wrap and refrigerate for at least 1 hour. Roll out cookies on parchment paper, cut shapes leaving space between the cookies, then place the parchment paper with the cookies onto a cookie sheet. Bake cookies at 350 degrees in a regular oven or 300-325 degrees in a convection oven until golden brown around the edges.
