    This chicken salad recipe is not only delicious and easy, but kid approved! Fiona's chicken salad Finding a salad that a kid will actually eat is never easy! This tasty chicken salad has been kid tested and approved. It isn't a surprise, given the sweet inclusion of apple, grapes and craisins. Add chicken, cucumbers and cheese, then toss with our favorite Uncle Dan's dressing. Serve for lunch or dinner. Even the adults will be asking for a second helping! Ask Questions/Forum Download Recipe Card Shop/Buy Project Supplies Kid-Tested Chicken Salad What you are creating: A delicious chicken salad filled with fruits, veggies and protein. This kid tested recipe is sure to please the entire family. Ingredients: 1 large Honeycrisp apple Bunch of grapes 3 Persian cucumbers 1 grilled chicken breast 1/4 cup Craisins 1 cup cubed cheddar cheese Optional ingredients 1/2 head romaine lettuce 1 avocado Honey roasted pecan pieces Uncle Dan's Ranch dressing 1 8 ounce container of light sour cream 1 cup mayonnaise 1 package Uncle Dan's ranch mix Directions: Cut the apple and chicken into bite sized chunks. Peel cucumbers and slice. You can cut the grapes in two or leave them whole. Place sour cream and mayonnaise in blender with the Uncle Dan's ranch mix and blend until smooth. Place all the ingredients into a bowl and toss with Uncle Dan's ranch dressing. You can increase or decrease the amounts, depending on your kid or adults favorite. Try adding a fresh avocado, or sprinkling with honey roasted pecans. Makes four servings. Kid tested and a proven winner!

Ingredients: 2 cups heavy whipping cream 2 packages Dr. Oetker's Whip It (stabilizer for whipping cream) 1 package Dr. Oetker's Vanilla Sugar 1 recipe Lemon curd 2 dozen pre-made pie tart shells, baked 1 carton fresh blueberries Candied lemon curls Mint leaves Directions: Place heavy whipping cream in the bowl of a stand mixer. Add the Whip It and Vanilla Sugar and beat until stiff. Reserve 1/2 cup whipped cream. Gradually add in the lemon curd into the whipped cream. Ingredients: Pastry for 9 inch two-crust pie 2 cups fresh rhubarb, cut into 1/2 inch pieces 2 cups fresh strawberries, hulled and halved 1/2 teaspoon orange zest, if desired 1/3 cup flour 1 2/3 cups granulated sugar 2 tablespoons butter Egg white, beaten Directions Preheat the oven to 425 degrees. Toss the rhubarb, strawberries, orange zest, flour and sugar in a large bowl. Layer the mixture in pastry lined pan. Dot with butter. Create lattice strips and apply to top of pie. Glaze the top of the lattice with egg white. Cover edge with a 2-3 inch strip of aluminum foil to prevent excessive browning. Remove the foil the last 15 minutes of baking. Bake for 40-50 minutes until the juice begins to bubble and the topping is golden brown. Makes approximately 8 servings. Try this delightful dessert!

Delicious with our creamy buttercream icing. Makes two 8 inch round cake pans. Ingredients: 1 1/2 sticks unsalted butter, at room temperature. 2 1/4 cups sugar 3 eggs 2 egg yolks 3 3/4 cups cake flour 2 tablespoons cake enhancer 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 1/2 teaspoons kosher salt 1/2 cup Dutch-processed cocoa powder 3/4 cup buttermilk 3/4 cup Crème fraîche 1/3 cup red food coloring 2 teaspoons vanilla extract Directions: Heat oven to 350 degrees. Cream together butter and sugar until light and fluffy (2-3 minutes). Scrape the bowl to ensure all ingredients are combined. In a separate bowl, whisk the eggs, egg yolks until they are thoroughly combined. Slowly pour the egg mixture into the butter and sugar mixture and beat until combined. Scrape the bowl to ensure all ingredients are combined. In a separate bowl, shift the dry ingredients together. Whisk the buttermilk with the crème fraîche and vanilla together in a small bowl. On low speed, alternate the addition of the flour and crème fraîche mixture into the butter mixture. Be careful not to overmix. Remove the bowl from the mixture. Use a spatula to scrape the sides and bottom of the bowl. Make sure the batter is completely incorporated. Spoon batter evenly into the two 8 inch cake pans. Bake for 50 minutes or until the cake springs back when touched in the center. Allow to cool completely in the pans on a wire rack. Ice with Butter based buttercream .
