True fact! Beef wasn’t readily available in Ireland and was considered a luxury. The Irish tradition was actually ham or bacon. Fast forward to the Irish arriving in America, the land of, well, plenty of beef. And that is when corned beef upstaged the traditional ham or bacon and became the Irish-Americans spin on a tradition that originated in their homeland. Nowadays, you can find this tasty meal on menus all year round, but it's especially popular on St. Patrick's Day. So, why not start your own Corned Beef and Cabbage tradition this year? Our corned beef and cabbage recipe is easy to follow! So invite some friends over, crack open a few beers, and enjoy this delicious meal together. Sláinte! Recipe Ingredients: 4 pound corned beef 1 head of cabbage 1 sweet yellow onion 4-6 red potatoes (more if you are feeding potato lovers!) 1 pound baby carrots Crock pot, slow cooker, instant pot or large kettle (stove top method) Recipe Directions: I cook my corned beef in a crock pot filled with water. You can use a low cooker, instant pot or in the oven -- use your favorite way of cooking a meat that requires a longer cooking time. Add the spice packet that came with the corned beef to the pot. Cover and bring to a boil, then reduce to a simmer. Simmer according to the recommended time on your appliance. The key to really good corned beef is to cook until it is fork tender. I like to remove the corned beef from the crock pot and place it in the 425 degree oven, fat side up, to brown the top. Bake for about 20 minutes or until top is browned. Add whole potatoes and carrots to the crock pot and cook until the vegetables are almost done. Add cabbage and cook for another 15 minutes. Remove meat from oven and let rest 15 minutes. Place vegetables in a bowl and cover. Add broth (cooking liquid reserved from cooking) to the vegetables. Slice meat across the grain. Serve with veggies and our Irish Soda bread. Enjoy! Recipe Ingredients: 1 cup sugar (more for coating doughnuts) 4 teaspoons baking powder 1 1/2 teaspoons salt 1/4 teaspoon nutmeg 1/2 teaspoon Saigon cinnamon (more for coating doughnuts) 2 eggs 1/4 cup unsalted butter, melted 7 ounces of milk 1 ounce apple cider vinegar 1 tsp LorAnn Vanilla Bean Paste 1 chopped Granny Smith apple 4 cups flour (plus more if dough is sticky) Recipe Directions: Whisk together milk, sugar and vinegar. Once combined add eggs and whisk. In separate bowl combine flour, baking powder, salt, nutmeg and cinnamon. Slowly combine with your wet ingredients. Once combined, fold in your chopped apples. Roll dough out and use a biscuit cutter to cut out circles. Using a smaller biscuit cutter, cut out center to create a ring. Save centers to fry up as doughnut holes! Fry doughnuts in oil until golden brown. Move to a rack to drain excess oil. While still hot, toss in a bowl of cinnamon and sugar. It's a combination of a traditional coconut pecan filling that is used in a german chocolate cake, layered it with ganache, and added a caramel burn sugar drizzle. It's simply heaven in every bite. Recipe Ingredients: Burnt Sugar: 1/2 cup sugar (for burnt sugar step) 1/2 cup boiling water (for burnt sugar step) Cupcakes: 2/14 cups cake flour 1 cup bakers sugar 3 teaspoons baking powder 1 teaspoon salt 1/2 cup high ratio shortening 2 eggs 1 tsp vanilla extract Ghirardelli caramel sauce Recipe Directions: Burnt Sugar: Melt sugar in sauce pan over low heat stirring constantly until clear and medium brown. Remove from heat. Slowly add the boiling water, stirring constantly, taking caution to not burn yourself from the steam. Measure and add additional water if needed to make 1 cup of liquid. Let cool. Dry Ingredients: In mixer bowl sift together first 4 cupcake ingredients. Add shortening, and 2/3 cup cooled burnt sugar liquid and beat 2 mins with paddle attachment. Add remaining burnt sugar liquid, eggs and vanilla. Beat 2-3 mins. Scoop batter into your lined cupcake pans using an ice-cream scoop. Bake 18-20 mins or until a toothpick inserted into the center comes out clean. Ganache: Heat one cup of whipping cream in the microwave in a microwave safe dish for about a min. You want it hot enough to melt the chocolate but you don't want to scald the milk. Add 1 pound of chocolate and let it melt into the cream. Once melted stir to ensure all the lumps are out. Top cupcake with freshly made ganache. Add a scoop of our coconut pecan filling on top (see recipe on site). Drizzle with Ghirardelli caramel sauce and enjoy! Ingredients: Pastry for 9 inch two-crust pie 2 cups fresh rhubarb, cut into 1/2 inch pieces 2 cups fresh strawberries, hulled and halved 1/2 teaspoon orange zest, if desired 1/3 cup flour 1 2/3 cups granulated sugar 2 tablespoons butter Egg white, beaten Directions Preheat the oven to 425 degrees. Toss the rhubarb, strawberries, orange zest, flour and sugar in a large bowl. Layer the mixture in pastry lined pan. Dot with butter. Create lattice strips and apply to top of pie. Glaze the top of the lattice with egg white. Cover edge with a 2-3 inch strip of aluminum foil to prevent excessive browning. Remove the foil the last 15 minutes of baking. Bake for 40-50 minutes until the juice begins to bubble and the topping is golden brown. Makes approximately 8 servings. Try this delightful dessert!
