Recipe Ingredients: 1 cup raw unsalted cashews, soaked in water overnight, 3 tbsp lemon juice ¼ tsp sea salt 3 tbsp melted unrefined virgin or refined coconut oil ½ cup all-fruit strawberry preserve 1 tsp vanilla bean paste 2 tbsp crushed up freeze dried strawberry powder Recipe Directions: Soak cashews in water overnight. Drain soaked cashews and rinse. Dissolve the freeze-dried strawberry powered in the lemon juice and set aside. Place in a food processor and blitz for about 2 mins until a paste forms. Be sure to scrap the side walls and bottom of bowl to ensure all the nuts have been ground down. Blitz again if necessary. Add lemon juice/strawberry powder mix, salt and vanilla bean paste to cashew paste and blitz until smooth. Stop and scrap bowl down as necessary, then add coconut oil until combined. Finally add preserve and blitz until smooth and creamy. Place it in an airtight container and let it chill in the fridge for at least 2 hours before using. Keep in fridge for up to one week. Recipe Ingredients: 2 cups all-purpose flour 1/2 cup packed brown sugar 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup butter, softened 1/2 cup sour cream 2 eggs 1 teaspoon vanilla extract 1/4 cup white sugar 1/4 cup packed brown sugar 1 teaspoon ground cinnamon 3/4 cup chopped walnuts 1/2 cup caramel ice cream topping Recipe Directions: Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round cake pan. In a medium bowl, mix together the flour, 1/2 cup of brown sugar, baking powder, baking soda, and salt. In a large bowl, cream together the butter and 1/2 cup of sour cream until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the flour mixture. Spread half of the batter into the prepared pan. In a small bowl, mix together the white sugar, 1/4 cup of brown sugar, and the cinnamon. Sprinkle over the batter in the pan, then sprinkle with the walnuts. Drizzle the caramel topping over the walnuts. Spread the remaining batter over the top. Bake for 35 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Let cool before serving. Enjoy! After blending the cheeses in a food processor, I shape them into half-mounds using a lined ball pan. A quick chill in the freezer helps them firm up. Then, I roll one in fresh chives and the other in crushed roasted pistachios. You can also use almonds or any nuts you like. These cheese balls are simple to prep ahead, easy to customize, and go great with crackers, veggies, or a glass of wine. Try this out for your next gathering and let me know how you make yours! Recipe Ingredients: 7 oz Tillamook Chive & Onion Cream Cheese 6.5 oz sharp cheddar, pub cheese ¼ cup fresh chives, minced ¼ cup roasted pistachios, crushed Plastic wrap Mini Ball Pan Recipe Directions: Add cream cheese and pub cheese to a food processor with the blade attachment. Blend until smooth, scraping the sides as needed. Line a ball pan with plastic wrap and scoop the cheese mixture into it, pressing down firmly. Wrap tightly and chill in the freezer for 10 minutes. Remove from the freezer and roll in minced chives or crushed pistachios. Transfer to parchment paper and refrigerate until ready to serve. Serve with crackers, veggies, or bread.
