Mille-feuille is a French phrase that translates to “one thousand leaves”. In pastry, it refers to the multiple thin layers that create the light, flaky texture found in a puff pastry dessert. We use standard frozen puff pastry for this dessert. One third of a sheet makes a dessert that serves two. Triple the recipe if you’re serving as a company dessert. Recipe Ingredients: 1 sheet frozen puff pastry (about 8 oz./250 g), preferably all-butter 1/2 cup (4 fl. oz./125 ml) heavy cream 1 1/2 tsp. granulated sugar 6 to 10 strawberries thinly sliced 6 Leaves of Fresh mint thinly sliced About 3/4 cup (3 oz./90 g) mixed fresh blackberries, blueberries, raspberries Confectioners’ sugar for dusting Fresh mint sprigs for garnish Recipe Directions: Preheat oven to 400 degrees. Thaw the puff pastry sheet according to the package directions. Line a baking sheet with parchment paper. Place the puff pastry sheet on a lightly floured work surface. Unfold the pastry and lay flat. Following the indentation from one of the folds, cut a strip of pastry about 3 1/2 by 10 inches, then cut crosswise into two even pieces. (Re-wrap and refreeze the remaining two-thirds of the pastry sheet to save for another use.) Place the pastry pieces on the prepared baking sheet. Using a fork, prick the pastry evenly all over. Bake until just golden, about 15 minutes. Transfer to a wire rack and let cool. Combine the cream and granulated sugar in a small bowl. Beat with a hand mixer on medium-high speed until stiff peaks form. Carefully split each piece of puffed pastry horizontally into 2 layers, making 4 layers in all. Place 1 layer on a plate. Spoon a third of the whipped cream over the pastry, then arrange half of the strawberry slices over the cream. Place a second layer of the pastry over the strawberries, spoon on another third of the cream and half of the berries. Place a third layer of pastry over the berries, spoon on most of the remaining cream and arrange the remaining strawberry slices over the cream. Top with the remaining pastry layer, the final spoonful of whipped cream and the last of the berries. Dust the top with confectioners’ sugar, garnish with mint sprigs and serve immediately. In season herbs jazz up any salad including my basil bow-tie pasta salad. Recipe Ingredients: 2-4 grilled chicken breasts 1 package Bow-Tie pasta Fresh basil 1/2 to 1 cup Parmesan cheese Regular or light Caesar dressing Recipe Directions: Bring 4 - 6 quarts of water to a rolling boil, add salt to taste. Add bow-tie pasta to boiling water. Stir gently. Return to boil. For al dente pasta, boil uncovered for 11 minutes. Remove from heat and drain. Allow pasta too cool. Toss with fresh basil, Parmesan cheese and grilled chicken pieces. Add cherry tomatoes and lettuce. Toss with Caesar dressing. Variations: You can also serve hot as a main dish: Cook pasta as directed above. Remove from heat and drain. Toss with fresh basil, Parmesan cheese and Caesar dressing. Cut the grilled chicken into bite sized pieces and toss with pasta. Serve immediately. Toss the butter in the flour then cut it in using a pastry blender. The butter should be well mixed in, but not smooth. Sprinkle about 4 tablespoons of the ice water over the flour mixture and toss until it comes together in a soft ball. Place between wax or parchment paper and roll it in to a round the size of your pie pan. Place the dough and pie pan in refrigerator and chill for one hour or until firm. Remove the wax or parchment paper and carefully invert the crust over the top of your chilled pie pan. Gently press the dough into the pan and form a border trim around the top edge of the pie pan. Prebake the crust in a 350 degree oven for 18 minutes or until lightly browned. Our cream scones develop a wonderful texture if the dough is frozen overnight. Freeze individual scones, and then bake as many as needed straight for the freezer to accompany breakfast, brunch or dinner. Recipe Ingredients: ½ cup sugar 3 ¾ cup bread flour, or pastry flour 2 teaspoons baking powder 2 teaspoons salt 1 cup freeze dried blueberries 2 ½ cups heavy cream, chilled Cooking spray for greasing Egg wash ( 1 large egg whisked with 2 tablespoons heavy cream) Recipe Directions: Combine the sugar, flour, baking powder and salt in a stand mixer fitted with the paddle attachment. Mix on medium speed until well blended, about 1 minute. Add the cream and mix on medium speed until just combined. Remove the dough from the mixer, and carefully blend the freeze dried blueberries into the dough. Pat into a 10-inch round ¼ inch thick, and divide into 12 equal wedges. Wrap in plastic and freeze for at least 4 hours, or until solid. Once dough is frozen, preheat the oven to 350 degrees. Lightly grease a baking sheet. Arrange the frozen scones on the baking sheet, brush with egg wash, and bake until golden brown, 35-40 minutes. Let the scones cool on the baking sheet for a few minutes before transferring to a wire rack. Let cool completely before serving.
