Mom knows best and her real butter icing is the best of the best! mom's Real Butter Icing Most icings are called buttercream but they don't all contain butter. Bakeries typically use high ratio shortening in their icing. My mom's creamy, not too sweet real butter icing, is a twist on a recipe she got from her old friend, Butch, when they worked together in the bakery at Stock Market Foods in Silverdale, WA. Mom says her icing is the real deal , because she uses real butter. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Mom's Real Butter Icing Difficulty: Easy What you are creating: Delicious and rich and not too sweet, this icing uses real butter instead of shortening. Worried about it not being true white? The more you mix it the lighter the color becomes. Ingredients: 1 pound butter 2 pounds powdered sugar 1 tablespoon vanilla bean paste 1/4 cup milk, half and half, or cream Directions: To get the best results, use a really good stand mixer, like a KitchenAid. Place the butter in the mixer and beat until it's fluffy. Add the powdered sugar, a couple cups at a time, alternating with the milk and vanilla. Once all the ingredients have been added, you need to beat the you-know-what out it! Put that mixer on medium to medium high and beat it until it is light and fluffy. If it's too thick, you can add more milk, but add it a tablespoon at a time. Makes approximately 4-6 cups of icing. Variations: Chocolate Icing: Add two tablespoons cocoa powder to the butter and beat until fluffy. Add the powdered sugar, a couple cups at a time, alternating with the milk and vanilla. Ingredients: Turkey carcass Left over wings and drumsticks Left over gravy if you have any Low sodium or sodium free chicken broth Celery stalks Sweet yellow onion, cut in quarters 1 tablespoon poultry seasoning or ground sage Bay leaf (optional) Directions Cut the turkey carcass into pieces and place in large stock pot, Ninja foodie, or crock pot. Add the left over wings and drumsticks. Add left over gravy, broth, vegetables and seasonings. Cook until meat falls off the bones. Allow to cool. Recipe Ingredients: 1 cup raw unsalted cashews, soaked in water overnight, 3 tbsp lemon juice ¼ tsp sea salt 3 tbsp melted unrefined virgin or refined coconut oil ½ cup all-fruit strawberry preserve 1 tsp vanilla bean paste 2 tbsp crushed up freeze dried strawberry powder Recipe Directions: Soak cashews in water overnight. Drain soaked cashews and rinse. Dissolve the freeze-dried strawberry powered in the lemon juice and set aside. Place in a food processor and blitz for about 2 mins until a paste forms. Be sure to scrap the side walls and bottom of bowl to ensure all the nuts have been ground down. Blitz again if necessary. Add lemon juice/strawberry powder mix, salt and vanilla bean paste to cashew paste and blitz until smooth. Stop and scrap bowl down as necessary, then add coconut oil until combined. Finally add preserve and blitz until smooth and creamy. Place it in an airtight container and let it chill in the fridge for at least 2 hours before using. Keep in fridge for up to one week. How to create burnt sugar coconut pecan cupcakes. Burnt Sugar Coconut Pecan Cupcakes I have taken some of my favorite flavors and textures to create this delicious cupcake. It's a combination of a traditional coconut pecan filling that is used in a german chocolate cake, layered it with ganache, and added a caramel burn sugar drizzle. It's simply heaven in every bite. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Burnt Sugar Coconut Pecan Cupcakes What you are creating: If you like coconut, pecans, caramel and ganache this is the ultimate cupcake recipe for you! Ingredients: Burnt Sugar: 1/2 cup sugar (for burnt sugar step) 1/2 cup boiling water (for burnt sugar step) Cupcakes: 2/14 cups cake flour 1 cup bakers sugar 3 teaspoons baking powder 1 teaspoon salt 1/2 cup high ratio shortening 2 eggs 1 tsp vanilla extract Ghirardelli caramel sauce Directions: Burnt Sugar: Melt sugar in sauce pan over low heat stirring constantly until clear and medium brown. Remove from heat. Slowly add the boiling water, stirring constantly, taking caution to not burn yourself from the steam. Measure and add additional water if needed to make 1 cup of liquid. Let cool. Dry Ingredients: In mixer bowl sift together first 4 cupcake ingredients. Add shortening, and 2/3 cup cooled burnt sugar liquid and beat 2 mins with paddle attachment. Add remaining burnt sugar liquid, eggs and vanilla. Beat 2-3 mins. Scoop batter into your lined cupcake pans using an ice-cream scoop. Bake 18-20 mins or until a toothpick inserted into the center comes out clean. Ganache: Heat one cup of whipping cream in the microwave in a microwave safe dish for about a min. You want it hot enough to melt the chocolate but you don't want to scald the milk. Add 1 pound of chocolate and let it melt into the cream. Once melted stir to ensure all the lumps are out. Top cupcake with freshly made ganache. Add a scoop of our coconut pecan filling on top (see recipe on site). Drizzle with Ghirardelli caramel sauce and enjoy! Makes approximately 2 dozen.
