Our Southern oven fried chicken breasts are crisp and delicious without deep frying in a pool of grease! Recipe Ingredients: 4 chicken breasts Avocado or olive oil cooking spray Avocado or olive oil (liquid) Buttermilk marinade 2 cups buttermilk 2 garlic cloves, minced 1 tablespoon fresh basil, chopped Coating 2 cups buttermilk pancake mix 1 tablespoon Johnny's seasoning or chicken salt 2 teaspoons onion powder Recipe Directions: Cut the chicken breasts into strips. About three strips per breast. Combine buttermilk, garlic and fresh basil in a deep dish with a lid. Place chicken in the buttermilk marinade. Place the chicken and marinade in the refrigerator and allow to marinade for at least four hours (or up to 24 hours). Preheat oven to 425 degrees. Combine pancake mix and seasonings. Make sure to whisk together to fully combine all seasons! Use tongs to remove the chicken from the buttermilk marinade and add to coating mix. Allow each piece to drain a bit so the coating mixture doesn't get clumpy. Make sure each piece of chicken is evenly coated. Generously grease a 9x12 baking dish with avocado oil. Place each piece of coated chicken in the dish. Spray the top of each piece of chicken with the cooking spray. Place in oven and bake for 20 minutes. Remove from oven and spray any floured areas on the chicken with additional cooking spray. Return to oven and bake for 20 minutes. Check the chicken to ensure there is no visible flour on top. If there is, spray with cooking spray and return to oven. Bake the chicken to 165 degrees. Remove from oven and allow to rest for 10 minutes. Serve with your favorite dipping sauce! Variations: Love drumsticks and chicken wings ? Use your favorite piece or the entire chicken! Like spicy? Add red pepper flakes to the coating mix.
