No problem. This recipe isn’t for them – it’s just for us adults. It calls for two six inch zucchini, but we do recommend you double it. Seriously, they are that good! Recipe Ingredients: 2 six inch zucchini 2 tablespoons avocado oil 2 large garlic cloves ½ cup chopped sweet yellow onion ½ teaspoon salt ¼ cup parmesan cheese 1 tablespoon sour cream ½ cup crushed croutons ½ cup mozzarella cheese Balsamic glaze Recipe Directions: Preheat oven to 375 degrees. Boil the zucchini gently in salted water for 5-6 minutes. Remove from water and let cool. Sauté the onion and garlic in the avocado oil until golden. Cut the zucchini in two and scoop out the pulp. Chop the pulp from one whole zucchini and add it to the onion and garlic mixture. Remove from heat. Add salt, Parmesan cheese, sour cream and crushed croutons. Mix until blended. Take the mixture and stuff each of the four zucchini halves. Place in oven and bake for 10 minutes. Remove the zucchini from the oven and sprinkle the mozzarella cheese over each half. Return to oven and bake until the mozzarella cheese is melted (about 5 minutes). Drizzle with balsamic glaze and serve with your favorite entrée. Recipe Ingredients: Flank steak or London broil Pink Himalayan sea salt Pepper Garlic and onion powder Olive oil Ground cumin Cilantro, thinly sliced Parsley, thinly sliced Recipe Directions: Sprinkle garlic and onion powder, Himalayan sea salt and pepper on both sides of the steak. Pour approximately 1/2 cup olive oil into a small bowl. Sprinkle a generous amount of ground cumin into the olive oil and stir to incorporate. Massage the olive oil/cumin mixture into both sides of the steak. Sprinkle the thinly sliced cilantro and parsley over the steak and pat into the meat. Repeat on both sides. Allow to marinade for several hours. For best results, marinade in refrigerator overnight. Allow to come to room temperature before grilling. Place steak on hot grill. Turn once the steak releases easily from the grill. Grill to 160 degrees. Remove from grill and allow the steak to rest for 15 minutes. Slice the steak on the bias. Serve and enjoy!
