Store-bought versions don’t hit the same. These come out hot, crunchy, and way more satisfying. People love making lumpia because they’re great for parties, meal prep, and freezer batches. You can roll a big tray ahead of time and fry them when you’re ready. That makes them perfect for get togethers or quick snacks. A few tips to keep things smooth. Run your filling through a food processor so it’s fine and easy to roll. Use a piping bag to speed things up and keep your rolls even. Keep your wrappers covered with a damp towel so they don’t dry out. Fry at 350 degrees and don’t crowd the pan so they cook evenly. Recipe Ingredients: 1 pound ground pork 1 small onion 1 carrot 1 celery stalk 3 cloves garlic 1 tablespoon fresh ginger 2 tablespoons beaten egg 1 tablespoon soy sauce 1/4 teaspoon salt 1 teaspoon white pepper Lumpia wrappers Oil for frying Recipe Directions: Add onion, carrot, celery, garlic, and ginger to a food processor. Pulse until finely chopped. Scrape the sides as needed. Add 2 tablespoons beaten egg and pulse again. Add ground pork, soy sauce, salt, and white pepper. Process until fully combined. Transfer the mixture to a piping bag. Cut about a 1 inch opening. Lay a wrapper with a corner facing you. Pipe a small log of filling about 2 inches from the bottom edge. Brush the top corner with egg wash. Fold the bottom over the filling, tuck in the sides, and roll tightly. Repeat. Heat oil to 350 degrees. Fry about 5 to 6 lumpia at a time. Keep oil between 340 and 360 degrees. Cook for about 5 minutes, turning as needed, until golden and the pork is cooked through. Drain on paper towels and serve hot. The downside is your crust won’t be as flaky as using one of the other fat types. Recipe Ingredients: 1 3/4 cups unbleached flour 1 teaspoon salt 1/2 cup oil (cannola, avocado or vegetable) 3 to 4 tablespoons cold water Recipe Directions: Measure flour and salt into a medium bowl. Add oil. Mix until pieces are the size of small peas. Sprinkle water, 1 tablespoon at a time and mix with the flour until flour is moistened and dough almost cleans the side of the bowl. Form the mixture into a loosely formed ball. Add more water if needed to mold the dough. Turn the dough out onto a floured work surface and gently knead into a ball. Divide the ball into halves and shape each half into a 4 inch circle. Wrap the dough in waxed paper or plastic wrap. Refrigerate for 30 minutes to 1 hour. Return the dough rounds to the floured surface, roll out one of the discs of dough into a circle. Turn the dough gently as you work. Center your pie pan upside down on the circle of dough and roll it out until it is about 2 inches larger than the edges of the pan. Carefully transfer it to the pie pan, rolling it up onto your rolling pin to move it. You can also fold it gently into quarters and place the point in the center and unfold it over the pie pan. Press the dough gently into the pan; trim away any excess dough, and patch any holes. Leave about 1/2 inch beyond the edge of the pie pan. Fold the edges up and over and crimp edges using a fork or your finger. Refrigerate the crust until needed. You can make in advance.
