In the culinary arts, the term “mother sauces” refers to béchamel, espagnole, hollandaise, tomato, and veloute sauces. Each sauce is considered a base recipe and is called mother sauce because it is the matriarch of its own unique family. Ingredients: 2 tablespoons flour 2 tablespoons butter ¼ cups half and half 1 cup whole milk Salt Pepper Optional: Pinch of nutmeg Directions: Heat the half and half for 45 seconds in the microwave. Do not boil! Melt the butter in a saucepan. Stir in the flour and cook on medium heat until it turns to a paste and begins to bubble. Remove from heat and add ¼ of the hot half and half. Stir until blended. Return to the burner and add the remaining milk, stirring constantly until the sauce thickens. Remove from heat. If you are going to use the sauce later, cover it with wax paper to prevent a skin from forming. Makes approximately 1 cup sauce. Variations: Cheddar Cheese sauce: Add ½ cup cheddar cheese after sauce thickens and turn burner down to low heat. Stir until the cheese has melted. Alfredo sauce: Add 2 minced garlic cloves to the sauce as it thickens. Add ½ cup Parmesan cheese and turn burner down to low heat and stir until the cheese has melted. Mornay Sauce: Add ¼ cup Parmesan and ¼ cup Gruyere cheeses after the sauce thickens and turn burner down to low heat. Stir until the cheese has melted. Related Projects:

Ingredients: 2 pounds white potatoes 1 tablespoon salt 2 garlic cloves, minced 1 sweet yellow onion, minced Cooking oil to sauté the onion 2 cups shredded cheddar cheese 1 quart low fat milk or half and half Butter for greasing pan Directions: Preheat oven to 350 degrees. Grease a 9/13 inch baking pan with butter. Sauté the sweet yellow onion in cooking oil until caramelized. Add the minced garlic and cook through. Peel potatoes and slice thin. Layer 1/3 of the potatoes in the pan. Spread 1/3 of the sautéd onion mixture over the potatoes. Spread 1/3 of the cheddar cheese over the sautéd onion mixture. Repeat with two more layers. Pour the milk evenly over the top of the potatoes. Bake until tender (about 60-90 minutes). Makes 6-8 servings. Variations: Cube 1 pound ham and brown in cooking oil. Layer on top of the cheddar cheese. Love spam? Substitute for the ham! How about a delicious dessert?

Ingredients: 1/2 cup butter 1/2 cup peanut butter 3/4 cup brown sugar 1/4 cup white sugar 1 eggs 1 teaspoon vanilla bean paste 1 1/4 cups flour 3/4 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt Honey roasted peanuts, crushed Directions: Cream the butter, peanut butter, sugars, egg and vanilla together. Shift the dry ingredients together and blend into the creamed mixture. Cover and chill for two hours. Heat oven to 375 degrees. Shape cookies into 1 inch balls. Dip the cookie ball in the crushed honey roasted peanuts. With a fork dipped in flour, flatten the cookies on the baking sheet. Bake 10-12 minutes or until set but not hard. Quick and easy, our braised Italian sausage will make your guests think you spent all day in the kitchen. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Braised Italian Sausage What you are creating: Italian sausage braised in a rich tomato sauce. Ingredients: 6 links Italian sausage 2 tablespoons olive oil 2 cups strained tomatoes 2 tablespoons red wine vinegar 1 tablespoon dried basil 1 teaspoon kosher salt 1/2 teaspoon black pepper Directions Preheat oven to 375 degrees. Rub the sausage with olive oil and place on a rimmed baking sheet. Roast the sausage until nicely browned, about 25 minutes. Turn oven down to 325 degrees. In an oven safe braising dish, mix the strained tomatoes, vinegar, basil, salt and pepper. Heat the tomato mixture on the stove top over medium heat until it comes to a boil. Turn off the heat, add the roasted sausage to the tomato braising liquid, cover and return to the oven. Allow to braise in the oven for 1 hour. Remove from oven and let stand for 10 minutes. Enjoy! Makes approximately 6 servings.
