In a large bowl, whisk together the melted butter and sugars. Allow mixture to reach room temperature. Add eggs and vanilla. Beat until well incorporated. NOTE: Make sure you beat well as this step ensures the brownie crust on top! Add the flour, cocoa, baking powder and salt. Whisk until incorporated. Pour the batter into a greased 9x13 baking pan. Bake for 28-32 minutes. Makes 12 to 16 pieces. DO NOT OVER BAKE! Ham croquettes are a tasty little bundle of ground ham and white sauce, rolled in bread crumbs and fried to a golden brown. These bite sized delights can be served as an appetizer or main dish or at your Mother’s Day brunch. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Ham Croquettes Difficulty: Easy What you are creating: Crispy ham croquettes made from ground ham and white sauce. Serve with creamed pea sauce. Yields: Approximately 2 dozen Ingredients: Thick White Sauce: ¼ cup butter ¼ cup flour ¼ teaspoon salt Dash of pepper 1 cup milk (whole, low fat or skim) Filling 2 cups ham, ground or coarsely chopped 2 tablespoons chopped and sautéed sweet yellow onion Coating 1 egg 2 tablespoons water ¾ cup dry bread crumbs Directions: Melt butter in sauce pan on low heat. Blend in flour, salt and pepper. Cook until mixture is smooth and bubbly. Remove from heat. Stir in milk. Place on burner over medium heat and cook to boiling, stirring constantly. Boil for 1 minute. Remove from heat. Stir in ham and sautéed sweet onion. Spread the mixture in an ungreased pan. Cover and refrigerate for a minimum of 3 hours. For best results, refrigerate overnight. Divide the mixture into 12 equal parts and shape into balls. Beat the egg and water until blended. Dip each croquette in the egg mixture and then roll in breadcrumbs. Cover and chill croquettes for at least two hours. Using a deep fat fryer or kettle, heat 3 to 4 inches of cooking oil to 365 degrees. Fry each croquette 1-2 minutes, until light brown. Ingredients: Topping: Chopped Shortbread Cookies Chopped Strawberry Wafer Cookies Callebaut White Chocolate Crispearls Directions: Topping: Chop shortbread cookies and strawberry wafer cookies up and place in a bowl. Add Crispearls, toss and set aside. Filling: In a bowl, beat the whipping cream with whip cream stabilizer until fluffy. In the bottom of a freezer safe pan, start to build your layers. First spread a thin layer of whipping cream and then arrange either the Pizzelle or Strawberry Biscuit cookies. Next add a layer of whipping cream. Then a layer of strawberries and to that sprinkle a bit of the topping. Repeat based on the depth of your pan. Recipe Ingredients: 1 3/4 cup water at 110 degrees 2 1/2 cups flour 3 cups oat bran 2 packages active dry yeast 1/2 cup oil 1/4 cup honey 1/4 cup brown sugar 2 teaspoons salt 1 cup oatmeal 1 egg white, beaten Recipe Directions: Place the 110 degree water into the mixing bowl of a stand mixer. Add yeast to the water and combine. Add oil, honey, brown sugar and oats. Add salt. Add all but 1 1/2 cups of the flour and oat bran mixture to the mixing bowl. Mix with dough hook and scrape sides during mixing. Once fully combined, gradually add remaining flour and oat bran mixture. Knead on medium low for 8-10 minutes until the dough is smooth and elastic. Grease a large glass bowl with butter. Turn the dough into the glass bowl and turn until it is coated with butter. Cover the bowl with a clean towel and set in a warm place (you will need to make sure the temperature is 80-85 degrees for optimal results). Once the dough has doubled in size (this will take about 1 1/2 hours), turn the dough onto a lightly floured surface. Gently knead into a smooth ball. Divide in two and form into loaves. Grease two bread pans. Place the dough loaves in the bread pans. Let rise until double (about an hour). Bake at 375 degrees until golden brown. Recipe Ingredients: 1 cup unsalted butter 2 cups confectioners sugar 1 egg 2 teaspoons Vanilla Bean Paste {or extract} 1 tablespoon Lorann red velvet emulsion 2-3 tablespoons milk 1/2 cup Hershey’s Cocoa Powder 1/4 cup Buttermilk Powder 3 1/4 cups All Purpose Flour King Arthur 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon apple cider vinegar Recipe Directions: Cream together butter and confectioners sugar. Add the egg, vanilla, red velvet emulsion, and milk. Mix well. NOTE: Start with 2 tablespoons of milk, then add the rest if the dough is a little dry after adding the flour mixture. Sift together the cocoa, buttermilk powder, flour, baking powder and salt. Add to the wet ingredients. As the dough begins to form add a splash of apple cider vinegar. The dough should be soft but not sticky. After mixing, let it rest for five to ten minutes, then roll out on parchment paper to 1/4 inch thickness, dusting lightly with flour if needed. I couldn't wait to get to Grandma's house and pull one of her delicious cookies out of the glass cookie jar. Her cookies were slightly crunchy around the edges and chewy in the middle. No other cookie has compared to hers! Recipe Ingredients: 1 cup butter flavored or regular shortening 1 1/2 cups white sugar 1/2 cup brown sugar, firmly packed 2 eggs 1 teaspoon vanilla 2 1/4 cups flour 1 teaspoon baking soda 1 teaspoon salt 1 package semi-sweet chocolate chips Recipe Directions: In a large bowl, cream the shortening, sugars, vanilla and eggs together until fluffy. Shift dry ingredients together. Gradually stir into the creamed mixture. Fold in the chocolate chips. Use an ice cream scoop to drop the cookies onto the cookie sheet. Make sure the dough is even with the top of the scoop. Bake at 375 degrees for 10-12 minutes. When you take the pan out of the oven, drop it on the counter. This will make the cookie flatten a bit and it will be extra chewy! Allow the cookies to cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely. In season herbs jazz up any salad including my basil bow-tie pasta salad. Recipe Ingredients: 2-4 grilled chicken breasts 1 package Bow-Tie pasta Fresh basil 1/2 to 1 cup Parmesan cheese Regular or light Caesar dressing Recipe Directions: Bring 4 - 6 quarts of water to a rolling boil, add salt to taste. Add bow-tie pasta to boiling water. Stir gently. Return to boil. For al dente pasta, boil uncovered for 11 minutes. Remove from heat and drain. Allow pasta too cool. Toss with fresh basil, Parmesan cheese and grilled chicken pieces. Add cherry tomatoes and lettuce. Toss with Caesar dressing. Variations: You can also serve hot as a main dish: Cook pasta as directed above. Remove from heat and drain. Toss with fresh basil, Parmesan cheese and Caesar dressing. Cut the grilled chicken into bite sized pieces and toss with pasta. Serve immediately.
