In the summer, we garnish with fresh fruits in season. In the colder months, we make up our own fruit sauce and add generous amounts to each slice. Recipe Ingredients: For the crust: 1 3/4 cups graham cracker crumbs 1/2 teaspoon Saigon cinnamon 1/2 cup butter, melted For the filling: 3 8-ounce packages cream cheese 1 cup sugar 2 tablespoons unbleached flour 2 teaspoons vanilla bean paste 2 eggs 1 egg yolk 1/4 cup milk Recipe Directions: For the crust: Preheat oven to 375 degrees. Mix the graham cracker crumbs and Saigon cinnamon together in a bowl. Add butter and mix until combined. Press the graham cracker mixture into the bottom and two inches up the side of an 8 or 9-inch springform pan. Set aside. For the filling: Soften the cream cheese in a large bowl. Combine the sugar, flour and vanilla with the cream cheese and beat with an electric mixer until combined. Add the whole eggs and egg yolk all at once. Beat on low speed until combined. Stir in the milk and stir until combined. Pour the filling into the springform pan. Place in a shallow baking pan. Bake at 375 degrees for 45-50 minutes (8 inch pan), and 35-40 minutes (9 inch pan). Bake until the center appears nearly set when shaken gently. Remove from oven and cool on a wire rack for 15 minutes. Loosen the crust from the sides of the pan and cool for an additional 30 minutes. Cover and chill for at least 4 hours before serving. Variations: Fresh fruit: When fresh fruit is available, slice the fruit and allow to set in a small amount of sugar. Recipe Ingredients: 1 3/4 cup water at 110 degrees 2 1/2 cups flour 3 cups oat bran 2 packages active dry yeast 1/2 cup oil 1/4 cup honey 1/4 cup brown sugar 2 teaspoons salt 1 cup oatmeal 1 egg white, beaten Recipe Directions: Place the 110 degree water into the mixing bowl of a stand mixer. Add yeast to the water and combine. Add oil, honey, brown sugar and oats. Add salt. Add all but 1 1/2 cups of the flour and oat bran mixture to the mixing bowl. Mix with dough hook and scrape sides during mixing. Once fully combined, gradually add remaining flour and oat bran mixture. Knead on medium low for 8-10 minutes until the dough is smooth and elastic. Grease a large glass bowl with butter. Turn the dough into the glass bowl and turn until it is coated with butter. Cover the bowl with a clean towel and set in a warm place (you will need to make sure the temperature is 80-85 degrees for optimal results). Once the dough has doubled in size (this will take about 1 1/2 hours), turn the dough onto a lightly floured surface. Gently knead into a smooth ball. Divide in two and form into loaves. Grease two bread pans. Place the dough loaves in the bread pans. Let rise until double (about an hour). Bake at 375 degrees until golden brown.
