How to make Potato Salad What you are making: Learn to create a delicious potato salad! Ingredients: 2 Eggs 3 Red Potatoes 4 Green Onions 4-5 Sweet Pickles & Juice 2 Tbsp Mayonaise 1/2 Tbsp Dijon Mustard 1/4 Tsp Celery Seed Salt & Pepper to taste Directions: Microwave potatoes or roast them. Once cool enough to handle cube cut them. Boil eggs and peel. Chop up green onions and pickles. Combine all ingredients in a large mixing bowl. Add Dijon mustard, celery seed, salt and pepper. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Strawberry Rhubarb Pie What you are creating: A sweet and tart strawberry rhubarb pie. Ingredients: Pastry for 9 inch two-crust pie 2 cups fresh rhubarb, cut into 1/2 inch pieces 2 cups fresh strawberries, hulled and halved 1/2 teaspoon orange zest, if desired 1/3 cup flour 1 2/3 cups granulated sugar 2 tablespoons butter Egg white, beaten Directions Preheat the oven to 425 degrees. Toss the rhubarb, strawberries, orange zest, flour and sugar in a large bowl. Layer the mixture in pastry lined pan. Dot with butter. Create lattice strips and apply to top of pie. Glaze the top of the lattice with egg white. Cover edge with a 2-3 inch strip of aluminum foil to prevent excessive browning. Remove the foil the last 15 minutes of baking. Bake for 40-50 minutes until the juice begins to bubble and the topping is golden brown. Makes approximately 8 servings. Try this delightful dessert!

Ingredients: 1 cup butter, melted 1 cup white sugar 1 cup brown sugar 4 eggs 2 teaspoons vanilla bean paste 1 cup Hershey's Special Dark cocoa powder 1 cup flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt Directions: Preheat oven to 350 degrees. In a large bowl, whisk together the melted butter and sugars. Allow mixture to reach room temperature. Add eggs and vanilla. Beat until well incorporated. NOTE: Make sure you beat well as this step ensures the brownie crust on top! Add the flour, cocoa, baking powder and salt. Whisk until incorporated. Pour the batter into a greased 9x13 baking pan. Bake for 28-32 minutes. Makes 12 to 16 pieces. DO NOT OVER BAKE! Use this tip to determine if your brownies are done: The edges will be visibly baked through and you can see the first signs of cracking on the brownies top. Ham croquettes are a tasty little bundle of ground ham and white sauce, rolled in bread crumbs and fried to a golden brown. These bite sized delights can be served as an appetizer or main dish or at your Mother’s Day brunch. Download Recipe Card Shop/Buy Project Supplies Ask Questions/Forum How to make Ham Croquettes Difficulty: Easy What you are creating: Crispy ham croquettes made from ground ham and white sauce. Serve with creamed pea sauce. Yields: Approximately 2 dozen Ingredients: Thick White Sauce: ¼ cup butter ¼ cup flour ¼ teaspoon salt Dash of pepper 1 cup milk (whole, low fat or skim) Filling 2 cups ham, ground or coarsely chopped 2 tablespoons chopped and sautéed sweet yellow onion Coating 1 egg 2 tablespoons water ¾ cup dry bread crumbs Directions: Melt butter in sauce pan on low heat. Blend in flour, salt and pepper. Cook until mixture is smooth and bubbly. Remove from heat. Stir in milk. Place on burner over medium heat and cook to boiling, stirring constantly. Boil for 1 minute. Remove from heat. Stir in ham and sautéed sweet onion. Spread the mixture in an ungreased pan. Cover and refrigerate for a minimum of 3 hours. For best results, refrigerate overnight. Divide the mixture into 12 equal parts and shape into balls. Beat the egg and water until blended. Dip each croquette in the egg mixture and then roll in breadcrumbs. Cover and chill croquettes for at least two hours. Using a deep fat fryer or kettle, heat 3 to 4 inches of cooking oil to 365 degrees. Fry each croquette 1-2 minutes, until light brown. Drain and keep croquettes warm in 350 degree oven until ready to serve. Spoon hot peas in cream sauce over croquettes. Side dish idea:
