Social distancing got you down? Our Mac & Cheese is sure to cheer you up!

The weekend is around the corner and comfort food seems to be what we are all craving these days. This macaroni and cheese is a staple in my family. I use three different kinds of cheese and top it off with crushed Ritz crackers coated in butter to add a crispy bite to our favorite dish. It's one of those recipes thats great for a family but also freezes well if you only need one or two servings.

Don't be afraid to experiment with a variety of cheeses until you find the flavor combination you like. I'm not super found of swiss cheese so I tend to gravitate to the cheddar and gouda type cheeses. If you want to switch it up a bit you can also swap out the cheddar for a gruyere cheese for even more cheesiness!

When I lived in New England I would buy fresh Maine lobster and add that to this recipe but swap out the cheese for the gruyere. And when Dungeness crab is in season here in the Pacific Northwest I will add that along with the gruyere cheese. If you are a crab or lobster lover you will absolutely love my seafood version!

This is my son Nate's favorite and he has learned to master my recipe and I hope you get in the kitchen and bake up this cheesy goodness too!
