If you love vegan cowboy cookies, this recipe is packed with oats, toasted coconut, pecans, chocolate chips, cranberries, and almond butter for a chewy cookie with plenty of texture and flavor. You don't need eggs or dairy to make a great batch at home.

These vegan cowboy cookies are great for dessert, lunch boxes, bake sales, or keeping a few in the freezer for when you're craving a homemade cookie.
Recipe Ingredients:
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup brown sugar
½ cup refined coconut oil, melted
¼ cup almond butter
2 tablespoons water
1 teaspoon vanilla bean paste or vanilla extract
1 cup old-fashioned rolled oats
½ cup toasted unsweetened coconut flakes
½ cup chopped pecans
½ cup dairy-free chocolate chips
½ cup dried cranberries
Recipe Directions:
Toast the coconut flakes in a dry skillet or a 325°F oven until lightly golden. Let them cool.
Whisk together the flour, baking powder, baking soda, and salt.
In a mixing bowl, combine the brown sugar, melted refined coconut oil, almond butter, water, and vanilla bean paste. Mix until smooth.
Add the dry ingredients and mix until combined.
Fold in the oats, toasted coconut, pecans, dairy-free chocolate chips, and dried cranberries. Mix just until everything is evenly combined.
Cover the dough and let it rest at room temperature for 1 hour. If you refrigerate the dough for up to 24 hours, let it sit at room temperature for 30 minutes before scooping.
Scoop six large cookies onto a parchment-lined baking sheet, leaving space between each cookie.
Bake at 350°F for about 14 minutes. Rotate the pan halfway through baking. The cookies are ready when the edges are lightly golden and the centers are set but still soft.
Let the cookies cool on the baking sheet before serving.
