If you haven't made pie crust cookies out of left over dough, you haven't experienced a delightful treat! My grandma always made extra dough when she made her pies. She'd take the excess, roll it out, lather it with butter and sprinkle it with a cinnamon and sugar mixture. The result was a cookie with a crunchy crust and flaky goodness.
Directions:
Combine cinnamon and sugar in a bowl and mix to combine.
Take left over or freshly made dough and form into a ball.
Roll out into a circle on a cookie sheet.
Generously spread the butter over dough.
Sprinkle with cinnamon and sugar mixture.
Cut the circle into wedges.
Bake at 375 degrees until golden brown.
Depending on how much dough you use, it can make several dozen cookies.
Variation:
You can add half brown sugar and half white and mix with the cinnamon.
