Recipe Ingredients:
Chicken breast, cooked and chopped
White, yellow, or sweet onion, chopped
Yukon Gold or russet potatoes, peeled and chopped
Carrots, chopped
Butter
Olive oil
Frozen peas
Chicken pot pie sauce mix
Store bought pie crust
Recipe Directions:
Heat butter and olive oil in a pan. Saute onion until soft. Add potatoes and carrots that have been microwaved until tender. Stir in chopped chicken. Add the sauce mix and cook until thick. Stir in peas last and warm gently. Line oven safe ramekins with pie crust and trim excess. Fill with the chicken mixture. Top with pie crust strips or decorations. Bake until the crust turns golden brown and cooked through.
Homemade sauce:
For homemade sauce, melt 3 tablespoons butter in a saucepan. Whisk in 3 tablespoons flour and cook for one minute. Slowly whisk in 1½ cups chicken broth and ½ cup milk. Cook until thick. Season with salt and pepper. Add to the filling and stir.
