Dark Rum Mojito Cocktail

What you are creating

This darker version of the classic mojito gets it rich color from dark rum. The Demerara sugar combined with the dark rum give this cocktail a taste of molasses, spice and honey and the lime juice and and fresh mint provide balance.

Directions:

  1. In a cocktail shaker, add mint leaves and sugar, muddle until mint leaves are bruised and fragrant. Add rum, lime juice and a cup of ice. Top shaker and shake vigorously until the shaker is cold to the touch.

  2. Fill a cocktail glass with ice. Pour Mojito through a fine-mesh strainer set over the glass and top cocktail off with club soda. Garnish with mint sprigs and enjoy!

Ingredients
  • 10 fresh mint leaves, plus sprigs for garnish

  • 2 teaspoons raw, Demerara, or light brown sugar 

  • 2 ounces dark or spiced rum

  • 1/2 ounce freshly squeezed lime juice

  • 1 cup of ice

  • Club soda or sparkling water
