Summer Pavlova

My Pavlova recipe is simple and delicious!


I love this meringue dessert, named for the Russian ballerina, Anna Pavlova. It's crunchy on the outside and chewy in the middle. It's light and delicious. Made with just a few simple ingredients, and topped with a colorful array of fresh berries on a bed of whipped cream.


The meringue can be baked and cooled up to a day in advance, then topped with cream and berries just before serving, making it a practical choice for a spring or summer dinner party. Honestly it can be made any time of the year because its so light it's the perfect dessert to balance out a heavy dinner. And you can use really any fresh fruit thats in season. Just stay away from frozen fruit as the extra water will break down your meringue. You could also just drizzle a preserve or fruit syrup over the freshly whipped cream en lieu of fresh berries! Either way, try it!
