Pink lemonade is a sure sign of summer! Whether you serve it cold over ice or in a cocktail, this refreshing drink hits the spot any time of the year. But what about as a yummy dessert? Absolutely!! Our Pink Lemonade cookies are easy and delicious.

It's hard to believe a boxed cake mix could churn out these deliciously moist cookies. Yes, you heard that correctly; a cake mix! If you love crinkle cookies during the holiday's then you will love these cookies. They bake up exactly like a crinkle cookie but tasted like summer in every bite.


The pink comes from a strawberry cake mix and the yellow comes from a yellow cake mix. We added some lemon and strawberry bakery emulsion to each cake mix to help boost the flavor profile. We know you will love these cookies so you are gonna want to stock up on the strawberry and lemon cake mix as it tends to only be available seasonally.


The Ingredients

To create these cookies you will need the following:

  • Strawberry Cake Mix

  • Yellow Cake Mix

  • Eggs

  • Vegetable oil

  • Lemon juice and zest

  • Lemon bakery emulsion

  • Strawberry bakery emulsion

  • Powdered sugar for dusting
