Texas Beef casserole is our take on the old recipe. We add the green pepper raw to make sure it retains it sweet flavor. It's loaded with onions and spiced with chili powder. Add in lean ground beef, tomatoes and rice and you have a quick and easy last minute dinner. Recipe Ingredients: 1 pound extra lean ground beef 3 large onions, chopped Avocado or olive oil for sautéing 1 large green pepper, chopped ½ cup water 1 can stewed tomatoes 1 cup uncooked rice 2 teaspoons chili powder 1 teaspoon salt Dash of pepper Recipe Directions: Preheat oven to 350 degrees. Heat 1 tablespoon oil in frying pan and sauté the onions until caramelized. Add green pepper and cook until pepper is cooked but still has a crisp consistency. Remove from pan and place in an ungreased 2 quart casserole dish. Add ground beef to frying pan and cook until the beef is crispy and the pan drippings are nicely browned. Place the cooked ground beef in the casserole dish. Add ½ cup water to the frying pan and stir until the residue in the pan is incorporated with the water. Pour into the casserole dish. Add the sautéd onions, chopped green pepper, stewed tomatoes, rice, chili powder, Johnny's seasoning and regular salt to the casserole dish. Stir to incorporate the spices evenly in the dish. Cover and bake for one hour. Remove cover and fluff up the rice by turning the top rice into the casserole. Enjoy! Variations: Substitute ground turkey for the beef. Recipe Ingredients: 1 cup raw unsalted cashews, soaked in water overnight, 3 tbsp lemon juice ¼ tsp sea salt 3 tbsp melted unrefined virgin or refined coconut oil ½ cup all-fruit strawberry preserve 1 tsp vanilla bean paste 2 tbsp crushed up freeze dried strawberry powder Recipe Directions: Soak cashews in water overnight. Drain soaked cashews and rinse. Dissolve the freeze-dried strawberry powered in the lemon juice and set aside. Place in a food processor and blitz for about 2 mins until a paste forms. Be sure to scrap the side walls and bottom of bowl to ensure all the nuts have been ground down. Blitz again if necessary. Add lemon juice/strawberry powder mix, salt and vanilla bean paste to cashew paste and blitz until smooth. Stop and scrap bowl down as necessary, then add coconut oil until combined. Finally add preserve and blitz until smooth and creamy. Place it in an airtight container and let it chill in the fridge for at least 2 hours before using. Keep in fridge for up to one week. Not only is this sweet treat bursting with juicy watermelon flavor, but it’s also a healthy alternative to store-bought ice creams and frozen desserts. Making your own sorbet allows you to control the ingredients—say goodbye to artificial flavors and hello to fresh, natural goodness! Recipe Ingredients: 1 cup Sugar 1 cup Water 1 Small Fresh Seedless Watermelon Recipe Directions: Prep the Watermelon: Start by cutting your seedless watermelon into chunks. You’ll need about 4 cups of watermelon chunks. Optional: Make simple syrup by using equal parts sugar to equal parts water add to a saucepan and boil. Remove from heat and let it cool down to room temperature. Alternatively: Instead of simple syrup, add a tablespoon of sugar or a squeeze of lime juice if you prefer a less sweet sorbet. Blend Until Smooth: Place the watermelon chunks in a blender or food processor. Blend until the mixture is completely smooth and no chunks remain. Freeze the Mixture: Pour the watermelon puree into the Ninja Creami pint container, leaving a little room at the top (don’t fill it to the brim). Place the lid on the pint container and freeze it upright for at least 24 hours. This allows the mixture to solidify completely, which is essential for the Ninja Creami to work its magic. Spin in the Ninja Creami: Once the mixture is fully frozen, remove the lid and place the container into the Ninja Creami machine. Select the “Sorbet” function and let the Ninja Creami do its thing!
