Recipe Ingredients:

  • 16 oz elbow macaroni or pasta of choice

  • 4 tablespoons butter, plus extra for greasing the baking dish

  • 4 tablespoons all-purpose flour

  • 4 cups milk

  • 2 cups shredded Gruyère cheese

  • 2 cups shredded white cheddar cheese

  • 1 cup grated Parmesan cheese, divided

  • 1 teaspoon black pepper, or to taste

  • Salt, to taste

  • Pinch of ground nutmeg (optional)

  • 1 cup buttery crackers, crushed

  • 2 tablespoons melted butter

  • Optional: 1/2 cup crispy fried onions for the topping

Recipe Directions:

Preheat your oven to 350°F. Butter a baking dish.

Cook the pasta 2 minutes less than the package directions. Drain and set aside.

Melt the butter in a large saucepan over medium heat. Whisk in the flour and cook for 1 to 2 minutes, stirring constantly.

Slowly whisk in the milk until smooth. Continue cooking until the sauce heats and begins to thicken.

Add half of the Gruyère and white cheddar cheese. Stir until melted and smooth. Season with pepper and salt. Add a pinch of nutmeg if desired.

Toss the cooked pasta with 1/2 cup Parmesan cheese.

Add the pasta to the prepared baking dish. Pour the cheese sauce over the pasta and stir gently to combine.

Top with the remaining Gruyère and white cheddar cheese.

Mix the crushed crackers with the melted butter and sprinkle over the top. Add crispy onions if using.

Bake for about 30 minutes, or until the top is golden brown and the edges are bubbly.

Let rest for 5 minutes before serving.
