Blonde Toffee Brownies
These Blonde Toffee Brownies are made with brown sugar, melted butter, vanilla, and chunks of dark chocolate. The brown sugar gives the brownies their toffee flavor, while the dark chocolate adds a little bitterness to balance the sweetness.
This is my base blonde brownie recipe, so you can change the mix-ins to suit what you like. Swap the dark chocolate for white chocolate or butterscotch chips, add nuts, or leave the chocolate out completely.
You don’t need a stand mixer for these Blonde Toffee Brownies. A hand mixer or whisk works fine. I bake them in an 8-inch square pan lined with a parchment sling, which makes them easy to lift out and cut once cooled.
Bake for about 25 minutes and you’ve got an easy brown sugar brownie recipe you can make your own.
Recipe Ingredients:
½ cup unsalted butter, melted
1 cup dark brown sugar
1 large egg, room temperature
1 teaspoon vanilla bean paste or vanilla extract
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ to ¾ cup chopped dark chocolate
Butter for greasing the pan
Recipe Directions:
Preheat your oven to 350°F.
Line an 8-inch square baking pan with parchment paper, leaving enough overhang to create a sling. Lightly butter the parchment and pan.
Combine the melted butter and dark brown sugar in a mixing bowl. Mix until combined.
Add the egg and mix until incorporated. Add the vanilla bean paste and mix again.
In a separate bowl, combine the flour, baking powder, and salt.
Slowly add the dry ingredients to the butter mixture. Mix until combined, stopping to scrape the sides and bottom of the bowl as needed.
Fold in the chopped dark chocolate. Add more or less depending on how much chocolate you want.
Spread the batter evenly into your prepared pan. Use an offset spatula to push the batter into the corners and level the top.
Bake for about 25 minutes, or until the edges are set and the center is baked through.
Cool before lifting the brownies from the pan with the parchment sling and cutting into squares.
You can replace the dark chocolate with butterscotch chips, white chocolate, nuts, or a combination of your favorite mix-ins.
