Blueberry Bran Muffin

Recipe you are creating:

Blueberry Bran Muffin

Learn to create delicious blueberry bran muffins.

Recipe Ingredients:

  • 2 cups Kodiak Buttermilk Pancake Mix

  • 1 cup Bobs All Bran

  • 2 eggs

  • 1 tablespoon baking powder

  • 1/2 cup packed brown sugar

  • 1 cup milk

  • Half container of blueberries

Recipe Directions:

  1. Shift the Kodiak mix with the baking powder and set aside.

  2. Beat eggs in large bowl. Add brown sugar and milk. Whisk together to blend.

  3. Add Kodiak mix and Bobs All Bran to the egg mixture.

  4. Mix together and add blueberries.

  5. Spray two regular sized muffin pans with cooking spray.

  6. Pour the batter into the greased muffin pans.

  7. Bake at 375 degrees for about 20 minutes.


Variation:

Substitute the blueberries with your favorite fruit and spice combinations!

  • Apple Cinnamon

  • Blueberry Ginger

  • Milk = As indicated or if Milk is just listed you may use 1%, 2% or Whole Milk

  • Butter = Unsalted Sweet Cream butter unless otherwise noted
