If you love herb based marinades or condiments, you will love my Chimichurri Sauce.
When I worked in Florida many years ago, one of my co-workers turned me on to chimichurri sauce. He served it slathered all over grilled flank steak and oh my was it delicious.
I'm not sure if it was the cilantro that hit my palate first, or the tang from the lime, but I fell in love with this green herby goodness. My friend's recipe called for cilantro and lime juice. I've switched it up and expended the use of herbs over the years.
This is delicious as a marinade but I love it as a condiment on my grilled flank steak or London broil.
Its not your typical chimichurri sauce as it contains cilantro, parsley and oregano, along with champagne vinegar for the acid rather than lime or lemon juice. It's the perfect balance of herbiness, garlicness, tang and spice.
I make it up either the night before or the morning of grill day. The longer you let it sit in the fridge the more developed the taste will be. Its best if made with fresh herbs and you can swap out the champagne vinegar for white wine vinegar if you can't find champagne vinegar. Regardless of how you use it, this green sauce will add so much flavor to your flank steak or London broil.
