banana cream pie

I'm always surprised when I bring an apple and  banana cream pie to a gathering. 

 

The banana cream pie is all gone even before two slices of apple have disappeared from its plate!

 

And that is when I discovered that banana cream pie is a forgotten favorite.

My cream filling is homemade and super easy to make.

What you are creating:

Makes one 9 inch pie.

Banana cream pie is the forgotten favorite. This easy to make pie will disappear fast so you just might want to double the recipe!

Ingredients:

Cream filling

  • 1/3 cup sugar

  • 3 tablespoons cornstarch

  • 1/8 teaspoon salt

  • 2 cups half and half

  • 2 egg yolks, slightly beaten

  • 2 tablespoons butter

  • 2 teaspoons vanilla bean paste

  • 3-5 ripe bananas

Pie crust:

  • You can purchase pre-made crust or use or basic pie dough recipe

Meringue topping:

  • 3 egg whites

  • 1/4 teaspoon cream of tartar

  • 1/2 cup sugar

  • 1/4 teaspoon vanilla extract

 

For top of the pie:

  • Vanilla wafers

  • Sliced bananas

Directions:

Cream filling:

  1. Blend sugar, cornstarch and salt in a 2 quart saucepan.

  2. Combine half and half and egg yolks, gradually stir into the sugar mixture.

  3. Cook over medium heat, stirring constantly until mixture thickens and boils.

  4. Continue stirring and boil for 1 minute.

  5. Remove from heat.

  6. Pour into a glass pan, cover with saran wrap and allow to cool to room temperature. Place in refrigerator.

 

Pie crust:

  1. Prepare pie dough and line a 9 inch pie pan. Prick bottom and sides of the dough.

  2. Preheat oven to 425 degrees. Bake pie dough for 8-10 minutes. Crust should be golden brown.

 

Meringue:

  1. Beat egg whites and cream of tartar until foamy.

  2. Beat in sugar, 1 tablespoon at a time, continue beating until stiff and glossy. Do not underbeat!

  3. Beat in vanilla.

 

Assembling the pie:

  1. Spoon a layer of cream filling into the pie pan.

  2. Add a layer of bananas.

  3. Top with another layer of cream filling.

  4. Scoop the meringue over the top of the pie. Spread evenly and carefully seal the meringue to the edge of the crust to prevent the meringue from shrinking.

  5. Broil the meringue until light golden brown.

  6. Add vanilla wafer cookies and banana slices on top.

  7. Refrigerate until ready to serve.

Left over cream filling:

  1. Layer the cream filling and banana slices in parfait cups.

  2. Top with ready-made whipping cream.

Variations:

Top the pie with whipping cream instead of meringue.
